My niece had her bachelorette party last night.
She looked gorgeous, as always.
It’s hard for me to believe that she is getting married.
Spoken in the words of an “aging woman”….
“Seems like just yesterday….” she was playing with Barney,
and skinning her knees.
She has grown up into a positively gorgeous woman, inside and out.
I couldn’t be more proud of her, or more blessed to have her not only as my niece, but one of my closest friends.

I was asked to make cupcakes for her dinner party last night. Her color is red, so red velvet was a no-brainer.
I planned to make cream cheese frosting, until one of my
sleepless lay-awake-and-count-things-to-do-nights.
I thought, white chocolate cream cheese would be good with red velvet.
I typed it into google and a Kraft recipe popped up right away.
It sounded just like what I had in mind, so I went for it!

White chocolate is my favorite and I could literally eat this by the spoonful. Yummy!
I usually use a different recipe but I couldn’t find it. Little did I know that was a blessing in disguise! This one is soooooo much better! It complemented my red velvet cake perfectly. I’ve found my new “go-to” cream cheese frosting!
April – I love happy accidents, don’t you? 🙂 So glad that you like the frosting!
Hello Michaela. This is the best frosting for a red velvet cake. I am making a red velvet as an 80th birthday cake and would like to add some roses (I usually make in buttercream) but make them with WHITE CHOCOLATE CREAM CHEESE ICING. Is this possible please ? Many thanks for your response. Keep safe. Kind regards
Trish
Hi, Patricia! I have to admit, cake decorating isn’t really my forte. Have you tried to make them and be unsuccessful because of the consistency?
What kind of “fine white chocolate” did you use/ do you suggest? This is my first try at white chocolate cream cheese frosting and I almost never use white chocolate so don’t really know what I’m looking for. Thanks!
I usually buy Ghiradelli chocolate!
I used half as much butter but it came out perfect for my needs! I was able to pipe with it but it was still soft and easy to spread and not too sweet
Thanks for the tip!
Looking forward to making this. How many ounces/grams is 6 squares of white chocolate?
Packages will vary. On the Ghirardelli package it tells you the equivalent of each square.
Am I to use salted or unsalted butter?
And about how many cupcakes can I frost with this recipe?
Please and thank you!
I prefer salted but use whatever you like. It should frost 12, depending on how much you use for each cupcake. 🙂
