Often times for the food, we do “Soup-or-Salad Bowl.” The first time I ever had this Tortellini Soup with Sausage was at one of those events. My other sister-in-law brought this hearty soup. It was fantastic! It’s been a family favorite ever since.

Simply brown some spicy Italian sausage and drain off any grease. Add a can of diced tomatoes and some chicken stock and let it come to a boil. Drop in cheese tortellini, and cook until done. Toss in a couple of handfuls of baby spinach and Ta-Da! The easiest soup I have EVER made, and so delicious!!

INGREDIENTS NEEDED FOR SAUSAGE TORTELLINI SOUP RECIPE

- Chicken stock – You can substitute chicken broth, beef stock, or vegetable broth.
- Diced tomatoes – Use regular, petite, or canned tomatoes with garlic.
- Italian sausage – I prefer mild Italian Sausage because it gives a little bit of heat, but you can use hot Italian sausage or any type you prefer. I buy the ground Italian sausage, but you can remove the casings from the links if you can’t find it.
- Cheese-filled tortellini – You can find refrigerated or frozen tortellini in your grocery store or homemade fresh tortellini will work. Store-bought tortellini provides the ease of putting this delicious soup together.
- Baby spinach – About two big handfuls of fresh spinach!
HOW TO MAKE TORTELLINI SOUP WITH SAUSAGE AND SPINACH
In a soup pot or large Dutch oven, brown your Italian sausage and drain any excess grease. Return to the pot. Add the can of tomatoes and chicken stock and bring to a boil.
Add in tortellini and cook until done.
Right before serving, toss in the spinach and give it a minute to wilt.
Garnish with some fresh parmesan cheese and serve hot. Enjoy!

TIPS AND TRICKS
- I love to garnish this soup with some grated parmesan cheese and some fresh basil. You can also sprinkle a little Italian seasoning, black pepper, or red pepper flakes for a little more spice. For a little extra pop of tomato flavor, you can add a tablespoon or two of tomato paste.
- If you have leftovers, you can store leftover soup in the refrigerator in an airtight container for up to 3 days. I do not recommend freezing this soup. Note that the tortellini does soak up the broth as it sits. You may need to thin the soup out when you enjoy it for leftovers.
Tortellini Soup with Sausage in the Slow Cooker
Want to make this yummy soup in your crockpot? After browning the sausage, add it to your crock pot along with the broth and tomatoes. Cook on low for 4-5 hours or high for 2-3 hours. Add tortellini and cook for 30 more minutes. Add spinach and cook for 10 minutes and serve.

- 1 14.5 ounce can diced tomatoes
- 1 pound spicy Italian sausage
- 1 20 ounce package of cheese tortellini
- 4 cups fresh baby spinach about two big handfuls

This soup was fantastic. I used mild Italian ground sausage, diced tomatoes which included garlic, basil, and oregano, and fresh tortellini. It had a great flavor that was even better as leftovers. I highly recommend this easy to make recipe.
