Marshmallow Popcorn Cake 

A long time ago, my friend, Gail told me about her popcorn cake recipe, and I was like “it’s a what?” She couldn’t believe that I had never heard of popcorn cake, and went on to tell me how easy they are to make, no-bake, super fun colors, and that she makes them for all sorts of holidays because they are so easily customizable to any theme or color scheme. 

Fast forward about (errrrrr…..) 5 years or so and when I was planning the recipes for my Ten Year Anniversary Celebration I thought — this is PERFECT! I was still on the fence about whether to call it my blog’s anniversary or my blog’s birthday and decided who wouldn’t want a Birthday Popcorn Cake?!  

 

Popcorn Cake

There are so many ways to switch up this cake, but I made it just like Gail does. Of course, if you had a peanut allergy that would be an easy fix to leave those out. I actually contemplated mashing the two ideas together and using peanut M&M’s.  Some recipes call for gumdrops, which would be super fun, as would jelly beans at Eastertime. 

Some recipes use caramel, but this popcorn cake is made with marshmallows.  It reminded me of a really good popcorn ball. You know the ones you don’t break your teeth on? It’s not hard like some, in fact, it was really gooey and yummy.

One thing about this popcorn bundt cake, you need to eat it rather quickly. Which for us, wasn’t a problem.

You will want to store it in an airtight container and eat it within two days. It’s best eaten fresh though. 

 

 

Ingredients in Popcorn Cake

You’ll Need:

  • popcorn
  • vegetable oil
  • butter
  • marshmallows
  • peanuts
  • M&M’s

 

How to Make Popcorn Cake

This cake literally comes together in about 10 minutes. It takes longer to do the dishes than it does to make it!

  1. Add popped popcorn to a large bowl. Spray bundt pan with non-stick cooking spray. Set both aside.
  2. Melt butter, oil and marshmallows together on the stove, stirring until smooth.
  3. Pour over the top of the popcorn and stir until popcorn is coated.
  4. Mix in the peanuts.
  5. Mix in the M&M’s quickly. The more you mess with them the more they will get melty.
  6. Press into the prepared bundt pan, and let stand for 30 – 60  minutes before inverting onto a plate.

 

Best if eaten the same day – store in an airtight container for up to 2 days.

Popcornis my favorite! I just can’t get enough of it, in fact, I have a whole catagory of popcorn and snack mix recipes on my site, one of my favorite snack mixes, my Touchdown Snack Mix doesn’t actually contain popcorn, but it’s made with buttery popcorn oil and it is so darn good!

I have to admit, when I make popcorn, there isn’t any left. Between me and the puppers, we tend to eat every last crumb. But because I had seen others ask if popcorn can be frozen, I decided to look into it, and guess what? It can!

If you decided to freeze already popped popped corn, just place it in an air tight container or bag releasing as much air out as possible. Store it for up to a month.  It will always taste better when it’s fresh though, so if you have some leftover, turn it into one of these great recipe!

Ingredients

  • 2 2.71 ounce bags of microwaved popcorn, popped and unpopped kernels removed (about 14 cups)
  • 1 16 ounce package marshmallows
  • 1/2 cup vegetable oil
  • 1 stick 1/2 cup butter
  • 1 cup salted peanuts
  • 2 cups M&M's 1 pound bag

Instructions

  • Add popped popcorn to a large bowl. Spray bundt pan with non-stick cooking spray. Set both aside.

    I can’t wait to try this. I’d never heard of popcorn cake before either. I love that it is gluten-free, since I’m gluten-intolerant. I also love that it’s so easy, since I’m always looking for easy recipes to make with my 5 year old and 4 year old “cooking assistants”.

    Going to use 4 mini bundts and let my 4 kids choose what chocolate they want to add in each one!

  3. Wow – this is such a fantastic recipe – the perfect blend of sweet and salty – gosh, I think I could do some serious damage to a whole popcorn cake and not mind a bit! YUM!

  4. This is an excellent dessert for a gluten free diet. Just check your add-ins to be sure they are gf. Much more fun and reasonably priced than most gf dessert.

  5. I’m just wondering why it has oil in it, instead of all butter? It seems most of the recipes do, but what is the reason why?

    1. I feel like putting it in the fridge might make it sticky. Did you find it didn’t hold together? When I have made it, it’s not as hard as say a popcorn ball, but still stuck together.
