I found these cute little ceramic loaf pans to bake mine in, but that isn’t even necessary! The bread is so good, they won’t care if it comes in a throwaway aluminum loaf pan!

I mixed these up for all of our special teachers to enjoy while they were “loafing” around on Christmas Break!

Ingredients

  • For the Bread:
  • 3 ripe bananas mashed
  • 1 cup sugar
  • 1 stick butter softened
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 2 cups flour
  • 6 Tablespoons milk
  • For the Streusel:
  • 2/3 cup brown sugar
  • 1/2 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 4 Tablespoons cold butter

Instructions

  • Preheat oven to 350 degrees and spray a loaf pan with non-stick cooking spray.
  • Combine all ingredients in your mixer for the bread, mix until smooth.
  • Place streusel ingredients in a medium sized bowl, using two knives or your fingers, crumble mixture together, will feel like wet sand.
  • Pour 1/2 of the bread mixture into the loaf pan, sprinkle 1/2 of the streusel over the top. Pour in remaining bread batter, top with remaining streusel and bake for 60 minutes.

    1. I am not 100% sure it’ll fill all four of them, but it should be very close! Fill the pans about 2/3 of the way full. I would love to hear how many you can get from it, as I haven’t tried the mini pans with this recipe.

  1. I’m making this a second time it was amaaazing! Question, salted or unsalted butter? If I only have unsalted should I add salt?

    1. Hi, Michelle! I am so happy you love this recipe as much as we do! It is absolutely okay to add a bit of salt if you don’t have unsalted butter. I didn’t specify on the recipe, but typically I do use salted.

  2. Incredible banana bread. The cinnamon, nutmeg and cloves set this recipe apart from traditional loaves. And the streusel layered in the loaf is a nice surprise.
    I made this gluten free by simply swapping flour (used King Arthur GF), adding 1/4 tsp xanthan gum and leaving out the 6 tbsp. milk. Because it was GF it took longer to cook (approx 80 mins). No one in my family could tell it was GF. And even my daughter who doesn’t like banana bread liked this recipe (the streusel worked it’s magic!).
    EXCELLENT recipe!

  3. I made this bread in mini loaf pans for Christmas gifts and the people just loved it!!!! I need to make again so I can try it.
