Bubblicious Bubblegum Cupcakes with Bubblegum Buttercream Frosting

Who could resist these Bubblegum Cupcakes all dressed up with pretty in pink bubblegum buttercream frosting, dusted with colorful sugar, and topped with a gumball? They make any day a fun day!
 
 
I have been making these bubblegum cupcakes for a long time!  They have been a hit with my kids and their friends since the first time I made them ten years ago.
I mean what’s not to like?  Unless you don’t like bubblegum? I don’t think I have ever met anyone that didn’t like bubblegum?

Bubblegum Cupcakes

These cupcakes came to be back in the day when you could say I was quite obsessed with making cupcakes.  I was just a little nutty about a show called Cupcake Wars.  

I had an idea to make bubblegum cupcakes and I couldn’t rest until I had them perfect.  Then I found it! Bubblegum Extract.  

It’s hard to believe that teeny tiny bottle can hold such a fantastic bubblegum flavor, but it does.  

You could use your own homemade white cake recipe, or you can use a box cake mix as I do.  I always use a white cake mix and use sprinkles inside the cake batter to give it the colorful “gumball machine” look.  You could use a Funfetti Cake mix to make it even easier. 

 
 
 
 
 

Bubblegum Buttercream Frosting

But what bubblegum flavored cupcake recipe would be complete without the perfect frosting? 

I used my buttercream frosting recipe, and again added some of that bubblegum essence.  Now it was time to complete the look.

In my opinion, a bubblegum frosting recipe should, of course, be colored bubblegum pink! I always find the McCormick Neon Pink Gel Food Coloring to always look perfect.  

I add a little bit at a time as the frosting whips in my mixer until the color I want is achieved.  

After piping on the frosting, I love to dust the tops with Rainbow Sparkling Sugar.  But the final touch, the gumball, like a cherry on top, making them perfect.  

 

 
 
 
 
Do you always hope for a certain color of gumball? I have always been partial to the white or the pink — the yellow ones? Ack!! Banana flavored.  No thanks!
 
 
 
 

How To Make the BEST Bubblegum Cupcakes

Honestly, cupcakes don’t get much easier to make than these.  Like I said before, I always use a box white cake mix.  You’ll need the ingredients the cake calls for, water, oil, and eggs, plus the bubblegum extract for flavoring.  

I use Rainbow Jimmies to achieve the colorful center of the cupcakes.  I always bake them in bright cupcake liners for presentation.  

The bubblegum frosting recipe uses butter, powdered sugar, milk, bubblegum extract, pink food coloring, and the gumballs and sparking sugar for decorating.  

 

 

 

This recipe makes one dozen bubblegum cupcakes.

 

I love how they look like they have colorful gumballs baked right into the cupcake!

Ingredients

  • FOR THE CUPCAKES
  • 1 box white cake mix
  • 1/8 teaspoon bubblegum extract
  • brightly colored sprinkles
  • FOR THE FROSTING
  • 4 cups powdered sugar
  • 1 stick of butter softened
  • 1/4 cup milk
  • 3/4 teaspoon bubblegum extract
  • bubblegum balls
  • sprinkles
  • pink food coloring gel

Instructions

  • Make cake mix according to the package directions. Add 1/8 teaspoon of bubblegum extract. Fold in brightly colored sprinkles. Bake in cupcake liners. According to package instructions. Cool.
  • To make frosting cream the butter in your mixer until it's fluffy. Slowly mix in the powdered sugar, bubblegum extract and milk. Color with neon pink food coloring.
  • Pipe frosting onto cooled cupcakes. Decorate with sugar crystals and a gumball.
