I love easy morning recipes like this! Especially in the fall, when we seem to run around like crazy people from one thing to the next!  This past Sunday was one of those days! My oldest son was home from college and returning early afternoon, and my youngest son had his last Junior Midget football game at 10 A.M. (hubby is a coach), my oldest daughter’s boyfriend, also home from college, and me wanted to get a home cooked meal into everyone before they all shot off in their own direction. (Not to leave out the youngest daughter who had wrapped up volleyball season the day before and at this point was just going with the flow!)

Lucky for me, I had procrastinated a bit at baking my selected Secret Recipe Club recipe for this month! This {pumpkin} Cinnamon Swirl Baked French Toast would be a nice addition to the requested omelettes we were having for breakfast!

This month I was given Fit Mama Real Food blog to cook/bake from.  Heather is the owner of the blog, and is a mom to two young kiddos, is a fitness instructor and natural food enthusiast! I browsed her wide selection of breakfast items, thinking that I wanted to not only do something “breakfast related” this month, but wanted to also keep with the Fall season! This was PERFECT.  The only thing I switched up was the addition of the “pumpkin” part.  We love the Pepperidge Farm Pumpkin Cinnamon Swirl bread this time of year.  It makes such fantastic cinnamon toast!  I did add a couple of extra slices of bread, because the slices are rather small.  We served it with a sprinkling of powdered sugar and some warm maple syrup!

{pumpkin} Cinnamon Swirl Baked French Toast

Easy baked French toast with flavors of fall.

Ingredients

  • 6 slices of Pepperidge Farm Pumpkin Cinnamon Swirl Bread cubed
  • 4 eggs
  • 1 cup milk
  • 2 teaspoons vanilla
  • 1 Tablespoon cinnamon
  • powdered sugar and warm syrup for serving

Instructions

  • Preheat oven to 350 degrees, and spray a small baking dish with non-stick cooking spray. (I used a 9" deep dish pie plate)
  • Place cubed bread into the bottom of the dish.
  • Whisk together eggs, milk, vanilla and cinnamon.
  • Pour over the top of the bread, and use the back of a fork to gently press the bread into the egg mixture so it's completely coated.
  • Bake for 35 minutes or so, until the egg is set.
  • Let sit for about 5 minutes before serving. Serve with a dusting of powdered sugar and warm maple syrup.

    1. Marsha, There wasn’t an option for that, but I don’t see why not? I mean there are lots of make ahead baked french toasts recipes, right? If you try it, will you let me know?
