Kraut Stuffed Bacon Wrapped Brats

I would have to say that out of ALL of the things we eat off of the grill, bratwursts are my favorite. There is nothing better in my opinion. Well, unless you dress it up with kraut, because … sauerkraut? It’s like the perfect condiment to a brat. The only way that gets better? Wrap it in bacon! Bacon makes everything better! That’s what we’ve done here, today, friends. We’ve made this already delicious bratwurst … EPIC.

I dreamt this recipe up a couple of weeks ago. We were planning to grill brats and I thought, what about not just putting the sauerkraut ON it, what about putting the sauerkraut IN it? But how would I contain it? It needed something to wrap around and keep it inside the bratwurst. BACON! Think of the bacon as the perfect little hug, a snuggie of sorts for this new recipe sensation. Brilliant. My idea worked … and today I share it with you!
Bacon Wrapped, Kraut Stuffed Brats – What you Need
- Frank’s Kraut
- Six Bratwursts
- Twelve pieces thick bacon
- Crusty Hoagie Rolls
The process will start with boiling your brats for a little while to get them to a point where they are almost done. It makes slitting them down the center easier, and once you put the bacon on them, they cook pretty fast on the grill. You can boil them in water, or use a couple of cans of your favorite beer. Slit them down the middle, without going all of the way through.
Take a heaping spoonful of Frank’s Kraut, and stuff it into the slit in the brat. I really packed it in, and left some on the top, too. (Of course I still added some more to the top when they were done ….)
Take two pieces of thick sliced bacon and wrap them around the brat, nice an snuggly. No toothpicks or anything required. Just place the side where the ends of the bacon are down first and it’ll cook that seam right together. I used my Grill Mat when I made these. It really helped from the grease of the bacon flaming up on the grill.
They are done when the bacon is cooked on all sides.
If you are on a low carb diet, these are perfect minus the buns. Just look at that plate of deliciousness.

Kraut Stuffed Bacon Wrapped Brats
Ingredients
- Frank's Kraut
- 6 Hoagie Buns toasted and cut down the center
- 6 Bratwurst boiling in either beer or water until almost done, slit down the center
- 12 pieces of thick sliced bacon
Instructions
- Boil the brats in beer or water until almost cooked. Slit them down the center (don't cut all the way through)
- Stuff the slit with Frank's Kraut, and leave some heaping out of the top.
- Snugly wrap the brat with two pieces of bacon.
- Grill until bacon is cooked on all sides.
- Serve on toasted hoagie buns. Top with more Frank's
