Chicken Fajita Marinade for Chicken

 The chicken can marinate for as little as two hours and as long as two days.  Cut it in strips for regular fajitas, or in chunks like I have done here to make my Chicken Fajita Kabobs. 


*What Goes into Making a Marinade?*

Fresh Herbs and Spices – Give the marinade it’s own flavor unique to all others.

Oil – The use of Oil helps the flavors enrich the meat.

Acid of Some Kind – Wine, Vinegar, citrus fruits like limes, lemons and oranges.  Acids add a tang to the marinade and help to tenderize the meat.

  • Zest & Juice of 2 Limes
  • 1/4 cup vegetable oil
  • 2 Tablespoons Orange Juice
  • 3 cloves garlic
  • 2 Tablespoons honey
  • 2 Tablespoons cilantro
  • 1 teaspoon salt
  • 2 teaspoons cumin
  • 1 teaspoon chili powder


  • Whisk together and use as a marinade for chicken fajitas.
