My friend Gail gave me an old cookbook she found at a thrift store. It was written in 1981 and it’s called Cooking with Love & Cereal. The first evening I had it I thumbed through and looked at every recipe! I marked so many of them to try, but this Chocolate Marshmallow Pie Crust is the first of the bunch!
I bet when you look at it, you probably think I used Cocoa Krispies Cereal, don’t you? Welp, I would have thought the very same thing, but I didn’t.
The chocolate comes from Hershey’s Chocolate Syrup, and I am here to tell you, it is what makes this crust so amazing! If you close your eyes and imagine how chocolate syrup tastes, that is the flavor of this pie crust, with the texture of a Rice Krispy treat.

Ingredients in Chocolate Marshmallow Pie Crust
As I mentioned, only four ingredients to this chocolate pie crust. You will need butter, miniature marshmallows, Rice Krispy Cereal and Chocolate Syrup. No special tools are required, just a saucepan, a 9″ deep dish pie plate and a rubber spatula.
How to make the Chocolate Marshmallow Pie Crust
Over low heat in a saucepan, mix marshmallows, butter and chocolate syrup together.
Heat, stirring frequently until marshmallows melt and the mixture can be stirred smooth.
Remove the saucepan from the heat add in the cereal.
Stir it all together.
Press into the bottom of a buttered pie plate. Reserve a bit for the top. Place in the freezer.
Fill with ice cream.
Garnish with a little of the crust mixture, if desired. Can be drizzled with more chocolate syrup.

My mind is spinning with ideas just talking about it! I filled my chocolate syrup version with vanilla bean ice cream, but it would be amazing filled with my Grape Nut Ice Cream , Cherry Chocolate Chip, or my Vanilla Caramel Swirl. I think that a strawberry marshmallow crust would be awesome filled with Lemon or Peach Ice Cream.
Fill a butterscotch marshmallow crust with No-Churn Pumpkin Ice Cream or a raspberry marshmallow crust with Chocolate Ice Cream. A peanut butter marshmallow crust would be over the top delicious with Peanut Butter Fudge Ripple Ice Cream or how about a caramel marshmallow crust with Almond Nougat Ice Cream or maybe Cinnamon Vanilla Bean?

Chocolate Marshmallow Pie Crust
Equipment
Ingredients
- 1 cup miniature marshmallows
- 1/2 cup Hershey's Chocolate Syrup
- 1 Tablespoon butter
- 3 cups Rice Krispies Cereal
Instructions
- Butter one 9" deep dish pie plate.
- In a medium-sized saucepan over low heat, stir marshmallows, chocolate syrup and butter until marshmallows and butter are melted and can be stirred smooth.
- Remove from the heat and stir in cereal until it's completely coated.
- Transfer to pie plate, reserving about 1/4 cup for topping if desired. Press into the bottom and up the sides of the pie plate.
- Place in the freezer for about 30 minutes.
- Fill with about 1 - 1.5 quarts of your favorite ice cream, top with reserved cereal, if desired. Return to the freezer for about 1.5 hours.
- Let rest on the counter for about 10 minutes to make slicing easier.
