Breakfast Hashbrown Pizza

I am always looking for ways to jazz up Sunday breakfast! A month or so ago we made Cinnamon Roll Waffles, and they were a huge hit. I seem to always have hash browns on hand, and one morning decided to make a pizza crust out of them!
This was really yummy! Next time I may try adding scrambled eggs to the the top. Maybe not though, it was perfect as is.
Press the (thawed if using frozen) hash browns onto your pizza stone, brown then add your toppings. The options are endless! Can even be made vegetarian!

Breakfast Hashbrown Pizza
Ingredients
- 3 cups hashbrowns if using frozen, thaw first
- 2 Tablespoons butter
- Salt & Pepper
- 2 cups ham chopped
- 1 cup bacon crumbled
- 4 ounces mushrooms sliced
- 21/2 cups cheese I used colby-jack and gouda shredded
- 2 green onions sliced
Instructions
- Preheat oven to 375 degrees. Spray a pizza stone with non-stick cooking spray
- Spread hashbrowns on pizza stone. Bake for 20 minutes to brown.
- Add toppings of your choice, top with shredded cheese.
- Bake for an additional 8-10 minutes or until cheese is melted.

This looks delicious! I love savory breakfast foods, but have a hard time finding recipes that don’t involve a lot of egg (I have an egg sensitivity, so this is crucial).
Two questions: What is the best way to defrost the hashbrowns? And could I use a pizza pan that has holes on the bottom, or is a solid surface necessary?
Carrie, Just leave them on the counter to defrost, or buy the kind that aren’t frozen. The reason I said that is because it will change the cooking time, and I didn’t have that information. 🙂 I don’t see why you couldn’t use that pan? I have one, too, love it! There isn’t anything liquid really — if you’re concerned, try covering it with foil? I hope this helps!! Enjoy!
