I am so excited to share with you my 2015 entry into the Saucy Mama Recipe Contest!

I present to you, my contribution to the seafood category: Sesame Ginger Salmon over Crunchy Ramen Slaw!

I am super excited to be among the 25 bloggers that are taking part in this contest.  It’s a qualifying event for the World Food Championships, that is being held in Kissimmee, Florida, this November.

Each blogger who was selected to participate, was given the choice of which Saucy Mama Sauces  they would like to work with.  Oh, my! Where to begin?  After much contemplation, here is the line up of which sauces I chose:

Saucy Mama

We had to make a recipe that fit in to one of these categories:  Burger, Sandwich, Bacon, Seafood, Pasta or Fresh Recipe.  My mind was swimming with saucy ideas, and I couldn’t WAIT to get started.

I have a love affair with all things ginger, so I knew I wanted to use the Pacific Rim Ginger Dressing.  Once I decided on what I would be making, I decided I just HAD to throw in the Miso Orange Sesame, as well.

They went so well together with the Asian style slaw and salmon I created.

I made a marinade for the salmon using the Miso Orange Sesame Dressing, sweetened up with some brown sugar.

Once the salmon was grilled, I glazed it with this deliciousness – made with Pacific Rim Ginger Dressing, and some fresh orange zest and juice.

The glazed salmon would have been perfect as it was, but I had to kick it up a notch.  I LOVE colorful food, don’t you?

I made this AH-Mazing crunchy ramen slaw, and dressed it with BOTH dressings.  The slaw has mandarin oranges, and really brought out that subtle flavor of orange to the salmon.  It was a match made in heaven.

Ingredients

  • FOR THE CRUNCHY RAMEN SLAW
  • 2 3 ounce packages ramen noodles, flavor packet removed
  • 1/2 cup sliced almonds
  • 1 16 ounce bag cole slaw mix
  • 1 cup shredded carrots
  • 2 cups purple cabbage sliced
  • 1/4 cup cilantro chopped
  • 1 15 ounce can Mandarin Oranges
  • 1/2 cup scallions sliced
  • 1/4 cup Saucy Mama Miso Orange Sesame Dressing
  • 1/2 cup Saucy Mama Pacific Rim Ginger Dressing
  • FOR THE SALMON
  • 4 5 ounce salmon fillets
  • MARINADE:
  • 1/4 cup Saucy Mama Miso Orange Sesame Dressing
  • 2 Tablespoons brown sugar
  • 1/4 cup honey
  • 1/4 teaspoon sesame oil
  • 1 Tablespoon low sodium soy sauce
  • GLAZE
  • 1/3 cup Saucy Mama Pacific Rim Ginger Dressing
  • 1 Tablespoon orange zest
  • 1/4 cup fresh orange juice
  • scallions for garnish

Instructions

  • TO PREPARE THE SLAW: Toast broken pieces of ramen noodles and almond slices on a cookie sheet at 425 degrees for 5 minutes, toss, return to oven for about 3 minutes more until they are golden brown. Set aside. Add all of the veggies to a big bowl. Right before you are ready to serve, add oranges, toasted ramen noodles and almonds, pour dressing on, and toss.

TO PREPARE SALMON:

  • Mix up the marinade and pour over salmon in a shallow dish. Place in fridge, after 30 minutes, flip salmon pieces over. Refrigerate for another 30 minutes. Prepare the glaze, refrigerate until ready to use. Place salmon pieces in either a hot skillet, or on the grill. (Spray with non-stick cooking spray to prevent salmon from sticking) Salmon will be done if cooked for about 7-8 minutes on each side. Brush on glaze. Garnish with scallions.
