When I was a kid, my Mom used to to make two kinds of meatloaf. The regular one with ground beef and ketchup on top, and THIS one that is made with pork sausage and has chunks of cheese inside. THIS one was the meatloaf that I looked forward to!
If you love the taste of pork sausage, and that little bit of kick it has, you will love this. It’s got chunks of melted Velveeta cheese inside, and it’s just plain tasty.
I made this a while back, and my youngest daughter was excited for dinner. At the time, my husband was traveling, and my oldest was away at school. There was only 4 of us for dinner that night. Typically when I make our Stuffed Pepper Meatloaf I use two pounds of ground beef, so it turns out pretty good sized. Then that one is covered in tomatoes and green peppers, (I still haven’t gotten past the whole baked ketchup meatloaf of days gone by…) so it really fills the pan up! This particular night I made it, as the recipe my mom wrote down for me so long ago called for, with one pound of pork sausage. My daughter exclaimed as I put it on the plate, “Oh!! It looks SO CUTE!!” Guess she isn’t used to seeing such a small entree at our house! Ha!
I typed it up just like it was given to me. This will easily feed four. I LOVE this left over on a sandwich, so you might want to consider doubling it, if you have a hungry table full or want left overs!
- 1 pound Pork Sausage, I buy Jimmy Dean
- 1/4 cup milk
- 3/4 cups cracker crumbs
- 1/2 cup Velveeta cheese, cubed
- 1/4 cup onion, chopped
- 1 egg, slightly beaten
Preheat oven to 350 degrees.
Prepare a loaf pan with non-stick cooking spray.
Combine all ingredients in a bowl, using your hands. Form into a loaf.
Bake uncovered for 1- 1/4 hours. Meatloaf will be brown on top.
