A couple of months ago, it was my friend, Gigi’s birthday. We were having lunch together to celebrate, and I wanted to bring her a treat. Let me just tell you about my friend, Gigi. We met about 12 or 13 years ago, when our kids went to pre-school together. Come to find out, we actually went to high school together. She was a year younger than me, and I didn’t remember her, but we had lots of friends in common. A few years ago, we went to see a mutual friend play at a local bar. We hit it off, and have been friends ever since.
I affectionately call her my concert buddy. We love our 80’s bands, and take the opportunity to see them whenever we get the chance. This is Gigi and myself last month at the Def Leppard, Poison and Tesla concert. When we get together, we always have a good time.
A couple of years ago I made her these Pina Colada Cupcakes for her birthday. I know how much Gigi loves coconut. I knew this year I wanted to make her a sweet treat with coconut, too.
This mix is delicious without the sprinkles — but so much more fun with them… don’t you agree?
They just say HAPPY BIRTHDAY!
