Grinch Fudge? How could anything this sweet be named after such a sourpuss? This white chocolate, simple to make, no candy thermometer required fudge would even make the Grinch’s heart grow 3 sizes!

I am participating in a fun blogger’s group this week called “Christmas Sweets Week.” All week long I will be sharing delicious recipes to tantalize even the sweetest of a Sweet Tooth! On Monday, I shared a recipe for Winter Wonderland Snack Mix. It’s a delicious snack mix dressed up in Winter White, glistening like a new fallen snow. As you can see today is all about this Grinch Fudge, Friday will boast a Salted Caramel Mocha Smoothie and last, but certainly not least, Saturday — with an Orange Meltaway Cookie Recipe!
Sweets & Treats gave each of us two packages of sprinkles. I chose “ Mean One,” and another that will be getting used at Valentine’s Day! The idea of this fudge was 100% inspired by these adorable sprinkles!
What Simple Ingredients go into this White Chocolate Grinch Fudge?
- cream cheese
- powdered sugar
- vanilla extract
- white chocolate
- lime green food coloring
- “Mean One” Sprinkles

You know that saying “Third Time is a Charm?” It totally rang through with this recipe. I made this fudge twice before this successful attempt. To say that candy thermometers and I have a fickle relationship, would be an understatement. Sometimes I have no problem at all, other times? Garbage.
My Eggnog Fudge ALWAYS comes out great. My Peanut Brittle? Sometimes it’s perfect, other times I need to keep my dentist on speed dial. So, after two attempts at a fudge I found in an old church cookbook, both of them not setting up and resembling the color of pea soup — I went in search of a fudge that didn’t require a candy thermometer.
The color part? I am going to tell you, the recipe says “Lime Green Food Coloring” — use that. If you use the regular green, it’s going to come out more “blue-green” and not Grinch colored at all. I love the gel food coloring the best. The colors are super vibrant.

Isn’t that little Grinch in the background, cute? Our boxers have a monthly subscription to BarkBox, and it came in last month’s box. Well, not that one exactly. Theirs is bigger, and very well loved. This little guy is a Christmas present for my Puppy-Nephew, Tony.
They also got an Antler like the dog wears on that Grinch movie. Even though he looks super cute — Theo wasn’t a fan. I put it on Libby, but he kept yanking it off of her head. I guess he didn’t want her to wear it either?
This fudge was super easy, and came out so well. It makes an 8×8 pan, and not having to use a candy thermometer was fantastic. One hint — if you want your fudge to be whiter, don’t use the pure Mexican Vanilla. It’s deep brown color will take the vibrance out of the green. Use a clear vanilla extract.

Grinch Fudge
Ingredients
- 12 ounces of good quality white chocolate melted according to package instructions
- 4 cups powdered sugar
- 8 ounces Cream Cheese softened
- 2 Teaspoons clear vanilla extract
- Neon Green or Lime Green Food Coloring
- 2/3 cup "Mean One" Sprinkles divided
Instructions
- Butter bottom and sides of an 8x8 inch baking dish. Set aside.
- In a medium bowl, beat cream cheese, sugar, and vanilla with your mixer until smooth.
- Melt chocolate according to package instructions, stir until smooth. Cool slightly.
- Fold melted white chocolate cream cheese mixture. Mix in food coloring until desired color is achieved. Fold in 1/3 cup sprinkles. Spread into prepared baking dish.
- Top with remaining sprinkles, gently press into fudge.
- Chill for 1 hour, then cut into 1 inch squares.
