Oh, I know. There are a lot of you out there that think that Valentine’s Day is some dumb Hallmark Holiday, and that is okay. You do you. Me? I will be over here pasting heart-shaped doilies on pink and red paper in preparation. And making some of these chocolate whoopie pies of course!

 

Chocolate Strawberry Whoopie Pies

In my opinion, the world can never have too much chocolate. There have been millions of studies done proving that chocolate can truly make you feel happier.  In fact, the darker the chocolate, the better, as it has compounds that stimulate endorphins, the same compounds that are released after you laugh.  Looking around in our world today – we could all use a little bit of happiness. Am I right?

These whoopie pies go one step further and actually involve some fruit, too. Strawberries and chocolate go together like Bert & Ernie. They are just better together. 

 

Chocolate Whoppie Pies with Strawberry Frosting

Of course, today when I have all things Valentine’s Day on the brain, these whoopie pies with strawberry cream are heart-shaped. But that doesn’t mean you have to have them that way. If you want to make them round, go for it! It’ll make the job easier, and they will taste just as good, too.

Ingredients in my Whoopie Pie Recipe

  • Devils Food cake mix
  • eggs
  • vegetable oil
  • vanilla extract

 

How to Make Chocolate Whoopie Pies

  • Preheat the oven to 350 degrees F.
  • In a large bowl, with a mixer combine cake mix, eggs, oil and extract until incorporated. Then beat on medium speed for 2 minutes.
  • Line a cookie sheet with parchment paper. Trace a cookie cutter to get the hearts all the same size. (or you can wing it – up to you) Hearts should be about 1 ½-2” in size. 

 

 

*tip – see how there is a good amount of distance between the two parts of the heart? You will want to make sure to do this, as they nearly double in size when they bake, and if they are too close, they will bake together and won’t look like a heart.

 

  • Fill a pastry bag or a ziplock bag with the cake batter and clip off the corner (add a pastry tip) The hole should be about 1/2” in size.
  • Pipe the hearts onto the parchment paper leaving an inch or two of space between for them to rise when they bake.

 

  • Bake until edges are set, about 7-8 minutes, then cool on cookie sheet for 2 minutes before removing them to a cooling rack to cool completely.

  • unsalted butter
  • cream cheese
  • vanilla extract
  • strawberry jam
  • powdered sugar

 

How to make strawberry cream filling for chocolate whoopie pies

  • With a mixer, cream together butter and cream cheese until fluffy. Add in vanilla and jam and mix until incorporated. Gradually beat in the powdered sugar until creamy.

 

 

  • Spread or pipe the filling onto one half of the cookie

 

 

  • top with another half.
  • Should make about 2 dozen whoopie pies. Refrigerate.

If you want to make your life really easy, and not even worry about piping the cake batter into circles or heart shapes, you can always use a whoopie pie pan. They even make heart-shaped ones

 

Freezing whoopie pies

Once your whoopie pies are made, you can freeze some to enjoy later on. I recommend wrapping them individually and then placing them in an airtight container in the freezer. Defrost them in the refrigerator, and enjoy them within 3 months.

Whoopie Pies – are they a pie? Or Are Whoopie pies a cookie or a cake?

Whoopie pies are the little dessert with the confusing-ish sort of name because they aren’t a pie at all.  The traditional style, with the chocolate cake and white filling, looks more like a big fat Oreo. (some even refer to them as the BFO) It’s like a cookie shaped soft cake on the outside, two sandwiched together with frosting filling the inside. Think of it as an inside-out cupcake.

Originating in the Pennsylvania Amish country, New England and Maine areas, people like me here in Nebraska may have never heard of them before. (the closest thing I ever saw to one was an Oatmeal Pie – but that’s a story for another time) They began migrating across the country in popularity, thank goodness, and all of us got to enjoy the deliciousness!

 

Whoopie Pies from a Cake Mix

My version here makes things simple and uses a cake mix. There are scratch versions out there – but some complain that their whoopie pies are a bit flat, and suggest a cake mix to get that fluffy soft cake-cookie, so I figured when I would try them, I’d skip the drama and use the cake mix version!

  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • For the filling:
  • 4 Tablespoons unsalted butter softened
  • 6 ounce cream cheese softened
  • ½ teaspoon vanilla extract
  • ¼ cup strawberry jam
  • 3 cups powdered sugar

Instructions

  • To prepare the Whoopie Pies: Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper.
  • In a large bowl, with a mixer combine cake mix, eggs, oil and extract until incorporated. Then beat on
    medium speed for 2 minutes.
  • Trace a heart-shaped cookie cutter on your parchment paper to get the hearts all the same size. (or you can wing it – it's up to you.) Hearts should be about 1 ½-2” in size. Flip the parchment paper over so pencil tracing is facing down.
  • Fill a pastry bag or a ziplock bag with the cake batter and clip off the corner and add a pastry tip. The hole should be about 1/2” in size.
  • Pipe the hearts onto the parchment paper leaving a couple of inches of space in between them for them to rise/spread out when they bake. ** make sure to leave a pretty good gap in the middle so the hearts stay heart-shaped when they bake.
  • Bake until edges are set, about 7-8 minutes, then cool on cookie sheet for 2 minutes before removing them to a cooling rack to cool completely.
  • To Prepare the Strawberry Cream Filling: With a mixer, cream together butter and cream cheese until fluffy. Add in vanilla and jam and mix until incorporated. Gradually beat in the powdered sugar until creamy.
  • Spread or pipe the filling onto one-half of the cookies, top with another half.
  • Refrigerate. Can be frozen for up to 3 months in an airtight container. Defrost in the refrigerator before enjoying.
