Raise your hand if you are like me and can’t stop eating the cookie dough while you’re baking cookies. Well, if you raised your hand, these Chocolate Chip Cookie Dough Brownies are the perfect brownie for YOU!
I bake a lot. I mean a lot. People ask me all of the time, “how do you not weigh 500 pounds?” and tell me all of the time how lucky my family is to get to enjoy all of these goodies all of the time.
Well, honestly, I share a large amount of what I bake, because, for one, I hate wasting food, and for two I guess they are just used to having it here so it’s not all that special to them anymore? But two things that I know will disappear from my counter without a doubt are brownies and chocolate chip cookies. These are the best of both worlds, in one.
Cookie Dough Topped Brownies
There are a couple of different ideas when it comes to chocolate chip cookie brownies. There is this version that is a baked brownie that is cooled and then topped with a thick layer of chocolate chip cookie dough and there is a version where the cookie dough is baked into the brownie mix itself, making it more of a cookie brownie.
In that version, you will basically plop sections of cookie dough on top of the brownie batter, and then it all bakes together. But this particular version gives you the satisfaction of eating raw cookie dough without your mother’s voice in your head telling you that it has raw eggs in it and it’s going to make you sick. This cookie dough has no eggs, totally safe to eat!
Can you bake eggless cookie dough?
So eggless cookie dough is okay to eat – but what about to bake? Welp, as tasty as eggless cookie dough is “raw” it would totally flop as a cookie. Why? Because eggless cookie dough is not only made made without eggs, but it’s made leavening ingredients like baking soda or baking powder, too. Without these, your cookies won’t rise. So save the cookie dough with eggs for baking and the eggless dough for making this chocolate chip cookie dough brownie recipe!
Freaky Friday Blog Hop
Before we get to the recipe for chocolate chip cookie dough brownies – I first need to tell you where the recipe came from! I am sharing this recipe for our annual Freaky Friday Virtual Cookie Exchange!
What’s Freaky Friday you ask? Well, to many it is a movie, but to this little group of food bloggers, it’s a good old fashioned blog hop. A group of us get together 5 times per year and secretly cook and bake from one another’s blogs and reveal our recipes all at the same time. In four of those five instances, we share recipes based on a particular season, but this round, it’s all about the cookie exchange!
For this round, you must make a cookie, candy or snack mix, something that you could put on a cookie platter for a holiday cookie exchange. Since we are located all over the place, an in-person exchange wouldn’t work, so we always called it a virtual cookie exchange. 2020 has been the year of virtual though, hasn’t it? So this makes even more sense this year!
Sugar Dish Me Blog
For this round of Freaky Friday, I was so excited to get Heather’s blog, Sugar Dish Me. Heather loves to bake, too, so as you can imagine trying to decide what to make was going to be tough! Before we get into that part though, let me tell you a little bit about Heather.
First off, she is hilarious. Although we haven’t ever met in person (yet), we have had quite a few conversations online, and I so enjoy her “tell it like I see it” way she communicates on her social media channels as well as on her website. I also love that she has a sense of humor and a thick skin when it comes to nasty comments, that is something I am not very good at, and trust me, folks, there are some mean people out there on the interwebs!
Heather lives with her husband and two teenage boys, which works out perfectly, she likes to cook and they like to eat! Heather started cooking at a young age when her mom handed her a cookbook and told her “if you can read, you can cook” and those are the words she lives by. She is also a fur mom to 6 dogs and 2 cats! I won’t even start talking about how much I love my furbabies, or we will never get to the recipe!
Sugar Dish Me Recipes
So, like I said, with a name like Sugar Dish Me as a blog to bake from for a cookie exchange recipe post, I knew I had my work cut out for me choosing a recipe. Boy was I right! I spent so much time on Heather’s blog it was actually a little fan-girl embarrassing! I narrowed the search down to her Hot Cocoa Cookies, Peppermint Cheesecake Cookies, and her Cookie Dough Fudge Brownies.
Finally, I decided on the Hot Cocoa Cookies, until I literally searched every grocery store and online for the Mallow Bits for the top, and came up empty-handed. There must have been a mad rush on them? Mark my words, though, the second I see them on the shelf, I will be making those cookies! I decided upon the brownies. But wait.
I fell in love with her Dark Chocolate Candy Cups, and I made them for Veteran’s Day! (Now I can finally fess up that I made them since she now knows I had her blog!)
I decorated the Chocolate Candy Cups (Homemade Chocolates) in red, white and blue, but I also showed them decorated in a few different ways to show how versatile they are.
One more thing about Sugar Dish Me Blog – I don’t want you to think that Heather only bakes — she has a huge assortment of savory recipes, too! Appetizers and Salads, and Main Dish inspiration galore! I have already printed off the recipe for Linguine Carbonara and Bacon & Crispy Brussels Sprouts to make next week on pasta night!
How Do You Make Chocolate Chip Cookie Dough Brownies from Scratch?
These cookie dough brownie bars are simple to make and are still 100% homemade. So skip that box brownie mix and grab your butter, sugar, vanilla, eggs, dark chocolate, flour, baking soda and salt! Let’s make the brownie!
You want to make sure to use a good quality dark chocolate!
Melt it on the stove until it stirs smooth. Set it aside.
Prepare your baking dish with buttered parchment paper, and set it aside. In a mixing bowl, combine butter and sugar until fluffy, add in eggs and vanilla and beat together. Add chocolate, mixing it in slowly, to temper the eggs with the warm chocolate, not cook them.
Mix in flour, baking soda and salt, just until it’s combined. Don’t over mix it.
Spread the brownie mix into your prepared pan, bake. Chill them in the fridge for about an hour. It makes it easier to spread the cookie dough on top.
Time to make the chocolate chip cookie dough! You’ll need sugar, brown sugar, butter, milk, vanilla, flour, salt and semi-sweet chocolate chips.
Cream butter and sugar together until light and fluffy. Beat in milk and vanilla. Mix in flour. Fold in chocolate chips.
Using a rubber spatula, gently spread the dough over the brownies. Pop it back in the fridge before you cut them.
I sprinkled the tops of mine with some sea salt – totally optional, but I loved them that way!
So delicious!!
Store the brownies in the refrigerator.

Chocolate Chip Cookie Dough Brownies
Equipment
Ingredients
For the Brownies:
- 6 ounces good quality dark chocolate coarsely chopped
- 1/2 cup salted butter softened
- 1 cup sugar
- 3 eggs
- 1 1/2 teaspoons vanilla I used vanilla bean paste
- 1 1/4 cups flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
For the Cookie Dough:
- 1/2 cup salted butter softened
- 1/2 cup brown sugar
- 1/4 cup sugar
- 3 Tablespoons milk
- 2 teaspoons vanilla I used vanilla bean paste
- 1 cup flour
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees. Line a 9x13" baking pan with parchment and butter it. Set aside.
- In a small saucepan over medium heat, melt chocolate, stirring until smooth. Remove from heat and set aside.
- To make the brownie batter: In the bowl of your mixer, beat butter and sugar together until light and fluffy. Add eggs and vanilla and beat for another 90 seconds. SLOWLY add the warm chocolate with the mixer running. This will temper the eggs, not cook them. Sift together flour, baking soda and salt. Add to wet mixture, mix until just combined. Don't over mix. Spread into the prepared baking dish and bake for 16 minutes. Place them in the refrigerator for about an hour. It'll make spreading the cookie dough on so much easier.
- To make the Cookie Dough: cream butter and sugar together in your mixer until light and fluffy. Beat in the vanilla and milk, slowly incorporate the flour. Fold in the chocolate chips.
- Spread the cookie dough over the chilled brownies, and chill them for another 30 minutes or so, before cutting them into squares.
- Store covered in the refrigerator.
