Blueberry Yogurt French Toast

Last weekend we celebrated my husband’s birthday. It landed on a Sunday this year, so I started it with breakfast! Typically he is in charge of breakfast on Sunday mornings, but it’s his day, so I took the reigns!
This blueberry yogurt French toast was a perfect birthday surprise. It turned out really pretty, didn’t it?
I found everything I needed at my local Baker’s supermarket in their Natural Foods section. I grabbed the Silk Soy Milk and the Noosa Yoghurt right in the refrigerated section, a carton of Simple Truth cage free eggs, then I rounded the corner to find the Simple Truth Country Style Italian bread, and headed to the produce section for some fresh blueberries.
Have you ever tried Noosa Yoghurt? I hadn’t until recently, and I am so hooked! The smoothest, creamiest yogurt I have ever eaten. Incorporating it into this blueberry French toast was brilliant.
I found this Simple Truth Organic Ready to Bake Country Italian Style Artisan Bread, and knew that it would be perfect for what I had planned. It baked quickly, and I sliced it up into 1 inch slices for our French toast.
Using Silk light vanilla soy milk gave the French toast a sweet taste that was perfect, too. I grabbed a dozen Simple Truth Natural Cage Free Eggs, and I was all ready to prepare my hubby’s birthday breakfast!

Blueberry Yogurt French Toast
Ingredients
- 2 eggs
- 1/2 cup Silk Light Vanilla Soy Milk
- 2 8 ounce containers Noosa Blueberry Yoghurt
- 1 loaf Simple Truth Country Italian Style Bread
- 1 pint fresh blueberries
Instructions
- Prepare bread in oven according to package instructions. Cut into 1" slices.
- Whisk eggs together. Add one container of Noosa yoghurt and Silk soy milk, whisk to combine.
- Heat griddle or skillet to medium high heat and spray with non-stick cooking spray, dip bread in milk mixture, coating both sides. Place on griddle and cook for about 2 minutes each side, or until golden brown.
- Serve with additional Noosa Yoghurt and fresh blueberries.
