The flavors of traditional stuffed peppers, in a jiffy!
Last week I decided a bit too late in the day that I wanted stuffed peppers for dinner. Now, mind you stuffed peppers aren’t difficult by any means, they are just a bit time consuming to throw together, and they take a while to bake. At 4 P.M. I didn’t have that option, unless of course we wanted to eat dinner as a bedtime snack. So I decided to make them “meatball style,” sort of how I make my Porcupine Meatballs. They were AMAZING!

"Stuffed Pepper" Meatballs
Ingredients
- 1 pound lean ground beef
- 1/2 cup minute rice dry
- 1 egg
- Salt & Pepper
- 1 14.5 ounce can diced tomatoes
- 1/2 cup beef broth
- 1 can tomato paste
- 1 large green pepper sliced
Instructions
- Combine ground beef with rice, egg and salt and pepper. Form into meatballs.
- Place in a skillet and brown on all sides over medium-high heat. When browned, add in tomatoes, broth, tomato paste and green peppers. Stir to blend, cover and reduce heat to medium-low. Simmer meatballs in sauce for 20 minutes.
- Serve over rice, if desired.
