This fresh apple granola is spiced with cinnamon, and dressed up with tart cherries, slivered almonds and pumpkin seeds for crunch. Perfect for snacking or gift giving!
Granola is such a great snack and makes great lunchbox additions. Plus, it’s awesome for topping yogurt for a quick breakfast in the morning. When I made this recipe using fresh apples, I was so happy with the outcome! Fresh apple granola, the perfect fall treat!

What Do I Need to Make this Fresh Apple Granola?
- quick oats, I love Bob’s Red Mill
- slivered almonds
- chopped apples, skins left on, I used Honey Crisp
- dried tart cherries
- pepitas (pumpkin seeds) I used the ones that are lightly salted
- brown sugar, cinnamon, salt
- honey, olive oil, vanilla
In a big bowl, mix together: oats, apples, dried cherries, slivered almonds, pepitas (pumpkin seeds,) cinnamon and salt.

Mix it all together!
On the stovetop in a small sauce pan, warm the brown sugar, honey, olive oil and vanilla, until sugar is dissolved. Pour sugar mixture over oat mixture. Stir until all coated.

Spread granola over prepared cookie sheet and bake until dry and lightly golden.

Fresh Apple Granola
Ingredients
- 2 3/4 cup quick oats
- 1 medium apple cored and diced, skin left on
- 1 cup slivered almonds
- 1 cup pepitas pumpkin seeds
- 1/2 cup diced dried tart cherries
- 1 Tablespoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1/3 cup olive oil
- 1/3 cup honey
- 1 teaspoon vanilla
Instructions
- Preheat oven to 300 degrees and line a large cookie sheet with parchment.
- In a large bowl, mix together apples, cherries, oats, almonds, pepitas, cinnamon and salt.
- In a saucepan over medium heat, warm the sugar, honey, vanilla and olive oil until sugar is just dissolved. Pour over oat mixture. Stir to coat. Spread onto prepared cookie sheet.
- Bake for 40 minutes, stirring occasionally, or until dry and lightly golden.
- Allow to cool to room temperature before storing in an air tight container.

I love the addition of the fresh apples! Sometimes granola can get boring and monotonous. The addition of the fresh apples brings it to a whole other level! Ice cream and yogurt have never looked better!

Hi, Lea! My apologies. This recipe is an older one, and for some reason when my new recipe card was installed, some of the older recipes converted really strange. I just updated the nutrition information on the recipe card – it would give you a better idea. This recipe makes about 8 cups and I based the serving size on 1/2 cup servings. Hope this helps! Thanks for pointing it out to me!
