Fresh Apple Granola

This fresh apple granola is spiced with cinnamon, and dressed up with tart cherries, slivered almonds and pumpkin seeds for crunch. Perfect for snack or gift giving!

Ingredients

  • 2 3/4 cup quick oats
  • 1 medium apple cored and diced, skin left on
  • 1 cup slivered almonds
  • 1 cup pepitas pumpkin seeds
  • 1/2 cup diced dried tart cherries
  • 1 Tablespoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/3 cup olive oil
  • 1/3 cup honey
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 300 degrees and line a large cookie sheet with parchment.
  • In a large bowl, mix together apples, cherries, oats, almonds, pepitas, cinnamon and salt.
  • In a saucepan over medium heat, warm the sugar, honey, vanilla and olive oil until sugar is just dissolved. Pour over oat mixture. Stir to coat. Spread onto prepared cookie sheet.
  • Bake for 40 minutes, stirring occasionally, or until dry and lightly golden.
  • Allow to cool to room temperature before storing in an air tight container.
