Easy Weeknight Lasagna Toss – Tastes like Lasagna, without all of the work.
We are all busy. Whether you work inside or outside the home, we are all just busy. Whether you have one kid or six, we are busy. Becoming a Mom teaches you not to judge the burdens that others are carrying. At least, I hope that becoming a Mom, well, maybe just becoming a grown-up does that. I know, not everyone, but it’s my hope that we can all someday accept that. It’s my wish. Well, that and world peace.
So some nights, as much as we would like to, it’s just not possible to have some glamorous meal on the table at 6 PM. Or even 8 PM.
Most kids enjoy pasta. Most ADULTS enjoy pasta. And cheese… I mean who doesn’t enjoy cheese? This meal is so quick to come together and bakes up in about 45 minutes. So make it ahead, bake it when you get home, or throw it together and bake it while you help the kids with their Math problems.
(Have I ever told you that I hate math? — it’s a two way street though, I know it hates me right back.)

- 12 ounces bow tie pasta, cooked and drained
- 1 small onion, chopped
- 1-2 cloves garlic, minced
- 2 pounds lean ground beef, browned and drained
- 1 jar spaghetti sauce
- 16 ounces cottage cheese
- 6 ounces Parmesan Cheese, shredded
- 8 ounce Mozzarella Cheese, shredded
Preheat oven to 350 degrees, prepare a 9x13 pan with non-stick cooking spray.
Brown ground beef in a skillet with onion and garlic. Drain excess grease. Return to pan and add spaghetti sauce, combine.
Cook pasta, drain and rinse. Add to sauce, combine.
Pour half of the pasta mixture into your baking dish. Top with half of cottage cheese, half of Mozzarella and Parmesan cheeses. Repeat with remaining ingredients.
Cover with foil and bake for 30 minutes. Remove foil and bake until cheese begins to brown and is bubbly. About another 10 minutes or so.
