How to Make Cherry Hand Pies with Pie Crust
This cherry pocket pie recipe is quick and easy!

Start by rolling out the pie crust slightly with a rolling pin to give yourself more room for cutting shapes.

Using a heart-shaped cookie cutter or pocket pie press, cut out your crusts. Once your shapes are cut, brushing the edges with the egg wash helps the pies seal so the filling stays put while baking.

A small amount of cherry filling goes in the center before topping with a second crust and sealing the edges.

A tiny vent cut in the top with a small knife allows steam to escape, keeping the pastry flaky.
Place on a baking sheet, and finish with a light egg wash, sprinkle with sugar, and bake until golden brown, watching closely since they cook quickly.
I like to use any of the excess pie crust to make pie crust cookies to serve along the pies with ice cream for dessert.

Storage and Make-Ahead Tips
Once baked and cooled, hand pies can be stored at room temperature for a day or in the refrigerator in an airtight container for up to three days. They’re great made ahead, just bake, cool completely, and store until ready to serve. Cherry {Heart Shaped} Hand-Pies
Ingredients
- 2 refrigerated pie crusts or your own homemade
- 1 can cherry pie filling
- 1 egg white whisked
- sugar
Instructions
- Preheat oven to 400 degrees
- Lay crust on a piece of parchment paper, and slightly roll it out further.
- You should get 6 hearts to (3 pies) to one crust.
- Brush the edges with egg white to get them to seal properly.
- Place two Tablespoons of cherry pie filling in the middle of each and seal edges together.
- Take a small paring knife and and make a small (vent) heart shape cut out.
- There will be extra filling, save for serving.
- Dust with sugar and bake for about 15 minutes.
- Watch them closely, they bake quickly!
