Apple Pie Oatmeal Cookies

I took my favorite cookie, my Mom’s Oatmeal Raisin Cookies and transformed them into these Apple Pie Oatmeal Cookies.  They have chunks of apple, golden raisins, and they are spiced with apple pie spice. The perfect little chewy cookie to enjoy in the fall or anytime you want a little slice of apple pie. (in a cookie!)

Sometimes I get an idea that turns out so good, I even surprise myself! These Apple Pie Oatmeal Cookies are one of those kinds of ideas.    

While brainstorming ideas for this year’s Apple Week, and it just sort of came to me.  I have loved my Mom’s Oatmeal Raisin Cookies my whole life, and I thought this could just work.  I had a happy accident one time when I added apricots and cranberries to them, why wouldn’t apples work? The Cranberry Apricot Oatmeal Cookies were loved by all who tried them.

Apple Pie Oatmeal Cookies

One of the things I love most about these cookies?  How chewy they are.  I don’t know what it is about crunchy oatmeal cookies, but I just find them hugely disappointing.  You need to know though, that these cookies can become that if they are over baked. 

 

Ingredients in Apple Pie Oatmeal Cookies:

  • shortening, butter
  • brown sugar, granulated sugar
  • flour, baking soda, salt
  • vanilla bean paste
  • eggs
  • apple pie spice
  • golden raisins
  • dried apples

 

For this recipe, I used 3 of the sponsored items I received.  I used the Fine Crystal Cane Sugar from Bob’s Red Mill, the Flahavan’s Irish Rolled Oats and the Vanilla Bean Paste from Taylor & Colledge.   I had never used a Vanilla Bean Paste before, and I loved the flavor.  Of course, you can use a good quality vanilla extract if you don’t have any on hand, but I encourage you to try it!

Scoop them with the small cookie scoop into round dough balls.  Bake until the edges are lightly browned.  Remember, don’t over bake or your cookies won’t be chewy.  I take mine out at 9 minutes and let them sit on the cookie sheet a minute more before transferring to a cookie cooling rack.

Apple Pie Oatmeal Cookies

Fall is most definitely my favorite season to bake.  There is just something about the scents and flavors of cinnamon, nutmeg, and clove that just get me right in the feels!

Apple Pie Oatmeal Cookies

Ingredients

  • 1/2 cup shortening I use the butter flavored Crisco
  • 1/2 cup butter softened (1 stick)
  • 1 cup light brown sugar
  • 1 cup granulated
  • 2 eggs
  • 2 teaspoons vanilla bean paste or 2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons apple pie spice
  • 3 cups rolled oats
  • 1/2 cup golden raisins
  • 1 cup dried apples diced

Instructions

  • Preheat oven to 350 degrees.
  • With your mixer, cream together butter and shortening. Add in sugars, vanilla and eggs, beat until fluffy.
  • Sift together flour, baking soda and apple pie spice. Gradually add it to the mixer until it's incorporated.
  • Fold in oats, raisins and dried apples.
  • Scoop rounded dough balls with a small cookie scoop, and place on an ungreased cookie sheet.
  • Bake for about 9 minutes, or until edges are lightly golden brown. Don't over bake them, or they won't be chewy.
  • Let rest on cookie sheet for a minute or so, before transferring them to a cooling rack.

  5. Oh yum, with all those spices in the mix I can almost smell these baking in the oven now – better hop to it! I don’t usually have dried apple on hand though, is it possible to make these with fresh apples if I dice them really small?
