Italian Chicken Noodle Soup

This is an Italian twist on one of my most favorite comfort foods. Italian Chicken Noodle Soup has thick egg noodles, Italian spiced chicken broth, lean chicken, tomatoes and fresh basil. Sure to be a new family favorite!

If you have stuck with me for a while, you know that soup is probably my very most favorite meal. I never get tired of it, and I’m just as happy eating it when it’s 100 degrees as I am when it’s 40 below. My Mom’s Homemade Chicken Noodle Soup was my most favorite meal of anything she made. I remember eating it until I was stuffed … and most times, I got the hiccups. We always laughed about it. I never seem to know my limits when it comes to how much I consume. To this day I always am saying, usually out loud, “I know I shouldn’t be having another bowl, it’s just so good.”
Some foods are just like that. They remind us of home. Do you have something like that? Without completely revealing my age, my time spent living at home was during the 70’s and 80’s. I had a Mom that stayed home with me, and we had dinner on the table every night at the same time. Values I have instilled in my own family. Gathering the family around the table for a meal isn’t always easy, but it’s always worth it. Time to check in and see how everyone’s day went.
We didn’t have a television in our kitchen growing up like most families do these days. Nor did we have any sort of technology devices to demand our attention. What we did have? A big console stereo, that unless “As the World Turns” was on, or perhaps a favorite after school cartoon was on the television, that stereo was on most of the time. My parents loved music, and we listened to all kinds. That is something else that I was raised on, and most often, if you come to my home, my tv is off and my stereo (now in the form of Sonos and Internet radio) is on. The music? You never can tell. It may be 80’s rock, new country, The Rat Pack, classical or even just the “spa” channel.
That’s why when I was asked to listen André Rieu’s new album, “Shall We Dance” and share it with you, I jumped at the chance.
Who is André Rieu?
André Rieu is a Dutch born violinist and orchestra leader, fondly known as “The King of the Waltz.” He is one of the best-selling classical musicians of all time, and one of the most popular musicians in Europe, selling over 40 million CDs and DVDs and notched 30 Number One chart positions worldwide. He is the leader of his own Johann Strauss Orchestra, the largest private orchestra in the world which has over 60 members. In the first half of 2009, he was the world’s most successful male touring artist, and the sixth top-grossing live act just below U2, Madonna, and Bruce Springsteen, and above Britney Spears and Coldplay. That same year, Rieu played to his biggest audience ever, over 43,000 people in Melbourne.
Rieu has been said to “thumb his nose” at the conventions of classical music. While attending his concerts, you’ll hear him tell jokes, stories, and even enjoy some slapstick comedy in between performing some of the most beautiful waltzes in the world, along with hits from musicals and films, and beloved popular and romantic songs from all decades. You’ll see members of the audience jumping up to dance in the aisles, waltzing or forming conga lines, while others can be seen with tears rolling down their faces during the more moving moments. “What I do is not an act,” he says. “If we look like we are having fun on stage, it is because we are having fun.”
I have been enjoying his latest, “Shall We Dance,” over the last week or so, while working in my office, and while I have gone about my cooking and baking. I have thoroughly enjoyed it. Choosing my favorite tracks is difficult, but I would have to say The Love Theme from Romeo & Juliet and Edelweiss from The Sound of Music are definitely ranked at the top.

Now that you have your own copy, turn it on, and let’s make some Italian Chicken Noodle Soup!
In a large dutch oven, melt butter and add in chicken, onion and garlic. Saute until chicken is cooked through.
Sprinkle with celery seed, Italian seasoning, Salt & Pepper. Add in tomatoes and chicken stock, drop in springs of Oregano. Bring to a boil and cover and cook for 30 minutes. Prepare egg noodles according to package instructions, chop fresh basil and grate Parmesan.
Add in egg noodles. Right before you serve the soup, drop in fresh basil. Give it a stir, pour into bowls and top with fresh Parmesan.

Italian Chicken Noodle Soup
Ingredients
- 1 1/2 pounds lean chicken breast meat cubed
- 4 Tablespoons butter
- 1 large onion chopped
- 4 cloves garlic minced
- 1/2 teaspoon celery seed
- Salt & Pepper to taste
- 2 teaspoons Italian seasoning I use Mrs. Dash Tomato, Basil and Garlic Seasoning
- 2 14.5 ounce cans petite diced tomatoes
- 1 1/2- 2 Quarts Chicken Stock
- 4 sprigs fresh oregano
- 1 16 ounce package frozen egg noodles
- 1/2 cup fresh basil chopped
- Fresh Parmesan cheese grated
Instructions
- In a large dutch oven, melt butter and add in chicken, onion and garlic. Saute until chicken is cooked through.
- Sprinkle with celery seed, Italian seasoning, Salt & Pepper. Add in tomatoes and chicken stock.
- Drop sprigs of oregano into the pot. Bring to a boil. Cover and simmer for 30 minutes.
- Cook your egg noodles according to package instructions. Chop basil and grate Parmesan cheese.
- Remove oregano sprigs from soup pot. Add noodles in. Stir. Before serving sprinkle with fresh basil. Scoop into bowls and serve with fresh grated Parmesan cheese if desired.

True story…. my mom had several of his cd’s…. she played them all the time when she was working on her genealogy or cooking. I’ll have to give your soup a try and do a comparison to our family favorite! It looks fantastic!

My kids laugh when I tell them that our tv had like 6 channels and when you wanted to change the channel I had to get up and move it. I hated that job so most of the time I didn’t watch TV I played board games and listen to music too! I would love to listen to one of my old MIX TAPES while eating a bowl of this soup and laughing!
