It’s time for another Fantastical Food Fight — you know the one where we get a recipe ingredient and are challenged to make something with it?  This month, our challenge?  HONEY.

There was no question if I would be participating in this round.  I LOVE me some honey!

I have a cousin that lives in Nicolaus , California.  She has honey bees on her property, and a bee keeper friend harvests the honey and gives her bottles of it, and I am the lucky recipient of it from time to time.  It is, hands down, the best honey I have ever eaten.  I use it all of the time.

Honey Sriracha Wings

Right after I accepted the food fight challenge, a foodie friend of mine, Steve, from The Black Peppercorn, posted this recipe.  I fell instantly in love.   That sweet heat sauce, over wings with that crunchy outside?  So Good!  I knew just what I was making.  These are PERFECT for tailgating, aren’t they?

The sauce is made with honey, Sriracha, rice wine vinegar,  onion and garlic.

Saute garlic and onion in a little bit of oil.  Add in vinegar, Sriracha and honey, simmer to thicken.

Dust chicken wings and drummies in flour.  Deep fry or pan fry until golden brown and chicken is cooked through.

They are delicious as is … but then you dunk them and coat them in the Honey Sriracha sauce and BAM!

I served them with some chilled celery sticks, and ranch and bleu cheese dressing on the side for those who wanted it.  I gave them a little sprinkle of fresh chives before serving.

Honey Sriracha Wings

Ingredients

  • 2 pounds chicken wings and drummies
  • 1 cup flour
  • 2 Tablespoons oil
  • 1 medium sized onion minced
  • 4 garlic cloves minced
  • 2 Tablespoons rice vinegar
  • 2/3 cup Sriracha sauce
  • 1/2 cup honey
  • Oil for deep frying

Instructions

  • Prepare the sauce: Heat the oil in a saucepan, on medium heat. Add onions and garlic and cook until tender, stirring often. Add in rice vinegar, Sriracha sauce and honey, bring to a low boil. Simmer for a few minutes and then remove from heat. Cool slightly. Blend with a stick blender until smooth.
  • Prepare your wings: Wash the wings and dredge them in flour. Shake off the excess flour and deep fry them in 350F oil for about 8-10 minutes. I didn't use my deep fryer -- I pan fried them in about 2" of oil for 4-5 minutes per side.
  • Place wings on paper towels to remove any excess oil, then toss them with the honey Sriracha sauce.
  • Serve with dressing and celery if desired.
