If there is one thing my family loves, it’s bread.  Home baked bread, sweet bread and CHEESE BREAD!  I can hardly get it to the table while I am cutting it, the slices are disappearing right before my very eyes!

That is just what happened the day I made this bread.  It was a Sunday and we were going to have it with our Chicken Parmesan that night for dinner.  I knew I wanted to get some good photos of the bread before I lost daylight. (can’t WAIT for longer sunnier days!)  I had purchased a large loaf of Italian bread, so I planned to make one of the loaves early, and save the other for dinner.  My in-laws had stopped by that day to bid us farewell before they were off to spend the winter in sunny San Diego. (yes, we want to be them when we grow up)  Everyone was chatting around the island in the kitchen, watching me make this bread.

As soon as it was done, I said, “does anyone want to try it?”

freaky friday winter edition

I had no doubt in my mind that this Four Cheese Roasted Garlic Bread Recipe was going to be good.  It was from my friend, Michelle’s blog, A Dish of Daily Life.   She was the blog I was assigned in this round of the Freaky Friday Blog Hop.  Freaky Friday has been going on for a whole year now.  It’s a group of my blogger friends cooking and baking from one another’s blogs, then keeping it a secret until the final reveal day.  Here is a link to the other Freaky Friday Recipes I have done.

I have known Michelle for a while now. We “met” through mutual blogger friends, and began chatting online, swapping ideas.  This past November, I even got the opportunity to meet her in person! She and I roomed together in Chicago at a blogger conference.   We had a ball!

Michelle lives in Connecticut, and is a super busy mom to 3 very active kids and 7 fur babies.  Her and her husband attend tons of sporting events, and she is most certainly her kids’ biggest cheerleader.  Michelle is an avid runner, a fantastic photographer, and all around great person that I am delighted to call my friend.

Choosing a recipe from Michelle’s blog wasn’t easy. I actually made two, this bread and her Spicy Carrot Refrigerator Pickles.  At first I planned to make her Cheese Crab Dip, and that one is still going to happen, then I was drawn to  some lovely soup recipes, especially the Lemon Chicken Orzo, but in the end the bread won out.

Making your own garlic butter, really is what makes this bread exceptional, in my opinion.  It’s not hard either, and I whipped it right up in my mini-food processor.

Halve a loaf of Italian bread, and slather on the garlic butter.

Four Cheese Roasted Garlic Bread

Ingredients

  • 1 loaf Italian bread cut in half lengthwise
  • ¼ cup butter cut into chunks
  • 1 Tablespoon extra virgin olive oil
  • 10 cloves of *roasted garlic
  • 1 handful of chopped parsley
  • 2 cups of cheese shredded cheese : mixture of mozzarella, provolone, fontina and parmesan (I used just a little more, you be the judge!)

Instructions

  • Preheat oven to 350 degrees.
  • Add butter, olive oil and roasted garlic cloves to a mini food processor and process until smooth. Add in chopped parsley. Pulse a bit more to incorporate.
  • Spread roasted garlic butter generously over bread. Top with cheese mixture.
  • Bake for 10 minutes or until cheese becomes melty and gooey!

Notes

*Michelle of A Dish of Daily Life explains how to roast garlic: "To roast your garlic, cut the heads off the bulbs and place them on a square of tinfoil, drizzle olive oil over the top, and wrap tinfoil around each bulb. Place in a pan and roast for approximately 45 minutes. Once they’ve cooled, you can squeeze the individual garlic cloves out. Store your extra cloves in a jar, cover with olive oil, and put them in the fridge until you need them. And now you’ve got the added bonus of some garlicky olive oil as well!"

It snowed last night and I didn’t make it to the grocery store and now I am very lacking in food…at least food I want to eat.
