I am so excited to share my new post with you today! I have been waiting for a MONTH to tell you about this top secret recipe post!
This is a Freaky Friday Recipe Swap that I did with 12 of my blogger friends. We all were assigned a blog to cook/bake from and today we are ALL sharing our posts, and who we had! It’s been TOP SECRET for a month!
I got to chose something from my friend, Kris’ blog, Big Rigs n’ Lil Cookies — it was SO HARD! I think I browsed through every recipe she has, I swear. Drooling my way through I found Jamaican Jerk Chicken, a to-die-for Overnight Crusty Artisan Bread and, wait for it, Revolutionary Mac ‘n Cheese! Kris and I have such similar cooking/baking tastes, everything she makes has my tummy growling!
But when I laid eyes on these Chocolate Waffle Cookies, I was caught, hook line and sinker.
I shared Cinnamon Roll Waffles a couple of weeks ago, and I guess I am currently having a love affair with my waffle iron?
I was nervous, so I made two as a trial run, and when we tasted them while they were still warm (ok … more like hot… we couldn’t wait) we all said in unison, “how good would these be with vanilla ice cream?”
The idea to make these into a dessert, or in our case, a Sunday afternoon treat, was born!
We topped the warm cookies with vanilla bean ice cream and drizzled with homemade Raspberry Sauce. They were AMAZING! Don’t get me wrong, they were DELICIOUS as a cookie, especially while they were still warm. But this would be a super fun idea for a dinner party, or a date night for two?
The batter made about a dozen cookies for me. They are big though, not teeny little cookies.

Chocolate Waffle Cookie Dessert
Ingredients
- 1/2 cup butter softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 ounce unsweetened chocolate melted
- 1 cup all-purpose flour
- 1 cup miniature semi-sweet chocolate chips or rough chop the regular ones
- Powdered Sugar
Instructions
- Preheat waffle iron.
- In a mixer bowl, cream butter and sugar until smooth.
- Beat in vanilla and eggs, combining until light and fluffy.
- Blend in the melted chocolate.
- Add flour, mixing until incorporated.
- Fold in chocolate chips.
- Spray waffle iron with non-stick cooking spray. Drop approximately 2 tablespoons of batter in each section of waffle iron (mine is a Belgian waffle iron, I have 4 sections) Mine were perfect baked for 4 minutes, but waffle irons will vary. I suggest you do a test cookie. Carefully lift cookie out and cool on wire rack. After cookie has cooled, dust with powdered sugar. OR
