I am one of those weird people that when someone says “what’s your favorite ice cream?” I don’t say things like “chocolate chip” or “vanilla.” For as long as I can remember my most FAVORITE ice cream in the whole wide world has always been Daiquiri Ice from Baskin Robbins ~ 31 Flavors.

Think super refreshing sorbet. It’s not “ice cream-y” at all — but that is fine by me. It’ll forever be my favorite and my only answer. It made with fresh limes and imitation rum extract. The other thing I love about it? The color!! Isn’t it just downright pretty, too?
Unfortunately, they have closed every.single.store. in Omaha.
There is a store in Lincoln, NE, and I get to go there when I visit my son at University of Nebraska at Lincoln (GO HUSKERS!) but the location is in a gas station, and they don’t carry all 31 flavors all of the time. Needless to say, it’s a HUGE disappointment when we stop and they don’t have it.
sigh.
But NOW… I can just MAKE MY OWN!
What’s in Baskin Robbins Daiquiri Ice?
- water
- sugar
- fresh lime juice
- imitation rum extract
- citric acid (fruit fresh)
- green food coloring
You’ll need an ice cream maker, but that shouldn’t stop you … they really aren’t all that expensive, and I have lots of other good reasons to have one if you keep reading! In addition to that, you’ll just need some rock salt and a bag of ice.

Update — I originally posted this recipe back in the summer of 2014. I have been so incredibly grateful to have it all of these years. I literally CRAVE this stuff. The only time I have been able to enjoy it, outside of making it at home, is when we are lucky to find it in Lincoln, or when we visit my in laws in San Diego every February.
That was until just recently. Baskin Robbins opened a store in Gretna, NE. Last week, my youngest daughter texted me on our fist hot day of the season and said — “Daiquiri Ice?” We took the top off of my new Jeep and off we went. “Ice Cream” for dinner is never a bad thing. Am I right?

{copy cat} Baskin Robbins Daiquiri Ice
Ingredients
- 6 cups water
- 3 cup sugar
- Juice of 3 limes fresh squeezed, pulp is fine
- 3 tsp imitation rum extract
- 2-4 teaspoons citric acid powder or Fruit-Fresh
- 3 drops green food coloring
Instructions
- In a pan on the stove, heat sugar and water just until sugar melts.
- Remove from heat and add 1 1/2 teaspoons citric acid. Stir until dissolved.
- Let mixture cool for a few minutes and add rum extract, lime juice and food coloring.
- Taste, and add more citric acid powder as needed, a 1/2 teaspoon at a time. The citric acid will be what gives this recipe it's tartness. The amount you will need will vary based also on the tartness of your limes. Mine weren't very tart at all, and I ended up using another 4 teaspoons to get it to where I was happy about the flavor.
- Refrigerate until chilled.
- Move and an ice cream maker. Churn in machine for about 55 minutes or until yours says it's ready (mine shuts off on it's own)..
- Move to the freezer for a few hours before serving.
- Makes about 8 cups

Daiquiri Ice is my favorite flavor too!! Did you ever have a “freeze” made with Daiquiri Ice? That is my favorite-favorite!! You blend daiquiri Ice with sprite or club soda and you drink it – OMG to die for! I cannot wait to try this recipe for myself! Thanks for sharing!

I can still get daiquiri ice in my city but it’s far out and I can’t get out there a lot. Atm, i have one of those 10lb+ tubs of it. This way I won’t have to go out for a while. If I do happen to run out I will try this and see if I can make it right

Just an FYI. There is a Baskin Robbins in west Omaha now. I called them. They do carry daiquiri ice. I’m not exactly sure the address. I live downtown. I plan to make the trek out there to get some. Glad there is a recipe though. I will have to try this also.

I was wondering if you have given any thought to the product True Lime instead of the citric acid. I needed the True Lime for another recipe and wondered if it might work to get the Daiquiri Ice tartness to the right level.

I don’t even know where to begin. Ever since I can remember, there was a Baskin Robbins at the local mall, right across from my favorite pizza joint. Mom would often drag me and my older Brother shopping with her as children. When she was done, she would let us stop at my
favorite pizzeria (RIP) so that we could sit and grab a fresh slice, where the dough was spun and stretched by hand (no one does this anymore) and afterward she would let us stop at BR31 for a cone before we left.
My brother would always get Rocky Road, but I couldn’t keep my eyes off the beautiful almost precious gem looking substance that practically glowed in the day. I had to have it. I remember my very first time, the lady at the counter warned me “Are you sure? It’s very sour!” And I nodded my head and voila, a shimmering ball of Daiquiri Ice on top of a cone, and I never forgot how happy I was with it.
From that point on, and I must have been 3-4yo, I always got Daiquiri Ice whenever I’d go. Even when I got older and wanted 2 scoops, I’d get Pralines and Cream on a cone, and a scoop of DI in a cup (I think it’s better with a spoon than on a cone, but lol, maybe that’s just me).
I’m not sure what my Mom fed me as a baby, but as far as I can remember I’ve always really enjoyed sour things. I don’t like hard candy unless it’s sour. I don’t like fruit unless has some sour mixed with the sweet (dried green mango slices are so good), and so, when I tried DI, it was love at first taste.
Sorry for such a long post, but I wanted to thank you for having the passion for and taking the time to figure out how to make this at home, because I have been trying to find this for years to no avail. The last time I found it was about 10 years ago and I hadn’t had it for over 10 years prior to then. So, needless to say, I’ve been deprived.
And with so many people vouching for and confirming that it tastes “EXACTLY” like the real thing, I now have no choice but to go out and buy an ice cream maker so I can do this myself.
Even though I haven’t tried it yet, just the fact that there’s a chance for me to have it again and have all the memories of my Mom, my Brother, my childhood, and a time when the world was nothing but fun and amazing, flood back into present thought, is something I need to thank you for, from the bottom of my heart!

It should give you an idea on your ice cream maker, they differ. I did a quick google check and it suggests to add 2 cups to the top of the ice. 🙂 Hope this helps!

Love this flavor… Can’t wait to try it. Another one of my favorites is Kahlua and Cream. Would you happen to have a recipe for that as well? I haven’t had it in forever but it was a favorite flavor of mine at Baskin Robbins from such a long time ago.

Can you use freeze dried lime powder in place of the Fruit-Fresh?
The citric acid powder (fruit fresh) is a key component to the recipe – I wouldn’t substitute anything else. Sorry!

I tried your recipe on Tuesday. I did get the Fruit-Fresh. I needed to add regular citrus acid to make it sour enough for me. With that said, this recipe is delicious! Daiquiri Ice is my ALL TIME FAVORITE flavor. This was perfect! Thank you for sharing.
