 St. Patrick’s Day is right around the corner.  I have been told I am just a smidgen Irish, not sure I can even believe that? All I know is, on St. Patrick’s Day, I sure am!

Mint Chocolate Chip Cookies - An Affair from the Heart

I love the food, and of course the green beer. 😉 I always try to add some new recipes to my St. Patrick’s Day Recipe Collection each year, and this year it starts with these Mint Chocolate Chip Cookies!

You all know that I am a part of The Secret Recipe Club.  I share a recipe from a page I have been assigned once per month with the rest of my group.  There are four groups total, so that means that on the months that have 5 Monday’s our club wouldn’t share anything new.  Lately we have been doing a themed recipe share, and we get to bake outside our normal group.  This month, the theme is Leprechauns & Bunnies.  I was assigned Lauren’s page, From Gate to Plate.  Lauren is a trained chef and lives on a 200 acre farm in Iowa. (we’re neighbors! 😉 ) she is a self-proclaimed country girl, and hard worker.  She believes in raising her own livestock, growing her own fruits and vegetables, and sharing how they come from her land and end up on her plate.   I set out to look at both Easter and St. Patrick’s Day recipes, She didn’t have much in the way of Easter recipes, but that’s okay, plenty of time for those! I lucked out in the St. Patrick’s Day theme though.  The hard part was choosing.  I narrowed it down to three.  Colcannon {Traditional Irish Potatoes with Cabbage and Leeks}Baileys Lucky S’more Bars and these Mint Chocolate Chip Cookies.  You can see which one won out.

My batter was what I would call pistachio colored.  I thought they would be plenty green, but after they baked I wished I would have added some more food coloring to them.  Of course, tinting them at all is totally optional.

Roll them in balls and bake them on parchment lined cookie sheets.  I got about 3 1/2 dozen cookies.

Ingredients

  • 1 cup butter softened
  • 1 1/4 cup sugar
  • 2 eggs
  • 1/4 teaspoon green food coloring adjust to liking
  • 1/4 teaspoon mint extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup mini chocolate chips

Instructions

  • Preheat oven to 375*F and line cookie sheets with parchment paper.
  • Cream together butter and sugar. Add eggs, one at a time, mixing thoroughly. Add food coloring and mint extract.
  • Sift together dry ingredients, gradually mix dry ingredients into the butter mixture. Fold in mini chocolate chips.
  • With a cookie scoop form cookie dough into balls and place on prepared cookie sheets.
  • Bake at 375*F for 10-12 minutes. Allow to cool on cookie sheet for 2 minutes before transferring to wire rack to cool completely.
