- 1 cup butter softened
- 1 1/4 cup sugar
- 2 eggs
- 1/4 teaspoon green food coloring adjust to liking
- 1/4 teaspoon mint extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup mini chocolate chips
Preheat oven to 375*F and line cookie sheets with parchment paper.
Cream together butter and sugar. Add eggs, one at a time, mixing thoroughly. Add food coloring and mint extract.
Sift together dry ingredients, gradually mix dry ingredients into the butter mixture. Fold in mini chocolate chips.
With a cookie scoop form cookie dough into balls and place on prepared cookie sheets.
Bake at 375*F for 10-12 minutes. Allow to cool on cookie sheet for 2 minutes before transferring to wire rack to cool completely.
