Whether we like it or not, summer is coming to an end. My kids already start school next week! I remember when I was a kid, we were off from Memorial Day until Labor Day, do you remember that? Their time for summer break seems to get shorter every year.
This year is a bit of a nail biter at our house. We are sending our last kiddos off to high school. Our twins will begin their Freshman year next Thursday. They have attended the same school for the last 11 years. From Pre-School until eighth grade at a Catholic school here in our home town. This year, they will attend one of the public high schools here. It’s always a big transition for the kids that go to school like that for their whole lives. They all scatter between different schools, some public and some parochial. You go from that tight knit bunch that is more like family, to a big school full of unfamiliar faces.
I have no doubt they will excel, just as they have all their lives, but I also know that attending that big school where you hardly know anyone has to be a little daunting. As a mom, I get nervous, too, but I have the confidence they will continue to always make good choices and make us proud.
Another thing I can be sure of? They will head out the door, with something in their tummy that will keep them satisfied until lunch. Like most kids, mine LOVE smoothies. Whether they are fruit filled, protein packed or fiber rich .. they are consumed here on a regular basis. I wanted to come up with one that would wow them, and I think I achieved my goal.

How To: Freeze and Use Ripe Bananas
Pour into a glass rimmed with graham cracker crumbs …
… and top with a dollop of whipped cream and a sprinkling of graham cracker crumbs and lime zest.

Key Lime Pie Smoothie
Ingredients
- 1 6 ounce Horizon Key Lime Pie Yogurt
- 1 6 ounce Horizon Vanilla Yogurt
- 1/3 cup Horizon Organic Milk
- Juice and Zest of one lime or more to taste
- 2 frozen bananas
- 1 Tablespoon of raw honey
- dash of cinnamon
- a couple of handfuls of ice
- Optional for serving: Graham cracker crumbs whipped cream, lime zest and a lime wedge
Instructions
- In your blender, blend together yogurt, milk, bananas, honey, cinnamon, lime juice and lime zest with ice. Start with a couple of handfuls of ice cubes, adding more to thicken to your liking.
- Run a bit of honey around the top of two glasses and press them into graham cracker crumbs.
- Pour the smoothie into both glasses, top with whipped cream, lime zest and graham cracker crumbs. Add a wedge of lime to the side for decoration.
