Honey Lemon Fruit Salad

A week or so before my kids headed back to school, they invited their friends over for a pool party to celebrate the end of summer.  I have boy/girl twins in 7th grade, and so that meant a pool full of 12 and 13 year olds! My kids attend a parochial school here in our hometown, and most of these kids have been in school together each year since Pre- School!   Funny story, their grade has FIVE sets of twins.  FIVE! Isn’t that crazy?  All of the sets are boy/girl except one set of boy/boy.  So, the day of the pool party, we actually had 3 sets of twins among the crowd.

The kids came over about 11:30 in the morning, and swam for a while while I got lunch together.  I made Ham & Cheese Sliders, Turkey Ranch Baguettes,  this Honey Lemon Fruit Salad and a cake with my kids’ favorite almond flavored butter cream frosting.

This fruit salad was s huge hit — it was full of all different kinds of fruit and topped with honey and lemon Yoplait®  yogurt.  So easy!

Our house is never without yogurt, and Yoplait® is our favorite choice.  Our only indecision is which kind to choose!  My oldest loves the Original, the hubby and I enjoy the Light, my oldest daughter loves their Greek and of course all of the kids are huge fans of Gogurt!  Throwing fresh fruit in a bowl and tossing it with yogurt is a common side for breakfast on Sunday mornings around here, but yogurt isn’t just for breakfast anymore, my friends! .  This day though, I added some honey to the mix, and it was heavenly!

You can find Yoplait® Yogurt in the dairy section of your local Walmart store.  The flavor choices are endless!

Honey Lemon Fruit Salad

Aside from the ease of this recipe, the best part is that you can totally cater it to be your very own.  Change up the fruit variety for what is in season, or what you have on hand.  Change the flavor of the yogurt to give it your own spin.  I always lean toward lemon because I am pretty much a lemon addict.  Please don’t judge. 😉

Honey Lemon Fruit Salad

Ingredients

  • 2 cups grapes
  • 3 nectarines skins left on, cut in chunks
  • 1 15 ounce can Mandarin oranges
  • 1 pint blueberries
  • 2 bananas sliced
  • 1 small pineapple cut in chunks (can use canned, drain first)
  • 2 6 ounce containers Yoplait lemon yogurt (can use Greek or regular)
  • 1/4 cup raw honey
  • 1 Tablespoon lemon juice
  • 1/2 Tablespoon fresh mint optional

Instructions

  • Add fruit to a big bowl, toss with lemon juice, drizzle with honey, toss again, Add yogurt and combine to coat all of the fruit. Snip some fresh mint if you desired. Chill and serve.
