This cucumber salsa is crisp, fresh and a delicious alternative to regular salsa.
They always seem to take over the garden. My favorite way to eat them is Cucumber Ranch Salad, but this Cucumber Salsa is a close second!
My oldest daughter works at one of the top hair salons in Omaha. Not too long ago she called me to tell me about this cucumber salsa one of the other stylists brought in. She RAVED about it.
I had her text me the ingredients, and I planned to make it soon. Then life got in the way and I procrastinated. We all do it, right? Well, then the cucumbers started showing up from friends and family’s gardens (you know who you are … THANK YOU!!) and I knew I had to make it!
Cucumbers, jalapenos, cilantro, red onion, tomato and a can of Rotel.
It tastes great right away, but even better after it’s refrigerated overnight!
Super duper yummy scooped up with tortilla chips — also AMAZING on top of a salad or as a topping to grilled chicken.

Let’s get chopping!
- 2 large cucumbers, chopped, skins on (about 4 cups)
- 1 tomato, chopped
- 1/2 red onion, chopped
- 1 jalapeno, chopped
- 1/2 cup cilantro (more or less to taste)
- 1 can Rotel, undrained
- 1 Ranch dressing packet
- 1/4 cup white wine vinegar
- Salt & Pepper
