I love when old becomes new and the forgotten becomes hip once again. Like Moscow Mules, for instance, nobody talked about them 5 years ago, and now they are the new “it” drink. It used to be, you would see a tray full of specialty meats and cheeses as an appetizer in an Italian restaurant, and it would be called an antipasto platter. These days, the menus of the cool and hip places to eat will serve you a Charcuterie board, Filled with all sorts of tastiness, like meats and cheeses, fruits, nuts, pickles, olives, jams and mustards to enjoy on breads and crackers while you ease into a night out with a glass of wine or cocktail of your choosing.
That’s me in the back, with 3 of my favorite people, out for my birthday dinner. We always order the charcuterie board and enjoy with a nice wine or martini before dinner. It’s fun to explore the flavors that different restaurants will add.
Now, thanks to HyVee, I can build my own Charcuterie board right at home. I was there the day that my HyVee on 180th and Pacific Street in Omaha, Nebraska, was installing their Charcuterie counter. I was so excited to educate myself and make my own boards right at home. The hubby got me on my way when he gave me a board for Christmas this year.

Here is what I used for my board: I chose four meats 1. Columbus Roasted Pork Roast 2. Rosette De Lyon Salame 3. La Quercia Tamworth Proscuitto and 4. Hot Sopressata Salame.
I had two cheeses: 5. Le Fromage D’Affinos Double Creme and 6. Italian Piave
I had a homemade Red Raspberry Jam (7.) and a Stone Ground Mustard (8.) for spreading
9. Smoked Salted Almonds and 10. Dried Apricots and Tart Cherries 11. Mixed Olives
and finally an assortment of crackers pretzels and toast: 12. Multi-Seed Crackers 13. Salt & Black Pepper Pretzel Chips 14. Mini Toast 15. Garlic Bagel Chips
Begin by placing your meat and cheeses on your board. I had an assortment of mild to hot meats, a couple of salames, a pork roast (that turned out to be the favorite among most) and of course, a Prosciutto.
I purchased about 1/4 pound of each meat, some were larger slices, so I cut them. Some I rolled and some I folded on the plate. I was planning for 4-6 people, and had plenty to re-stock my board a second time.
After choosing my meats at the HyVee Charcuterie counter, I walked over to the huge cheese section and spoke with the specialist on what to pair. She suggested a soft cheese and one hard.
I purchased everything I needed at Hyvee, with the exception of the jam, which was homemade. I chose to use olives this time, but for those of you who make homemade pickles, they are perfect on the board, too. Add these to your board, and finish with your pretzels, crackers or even toasted bread of you prefer.
Pour the cocktails and relax and enjoy!

I shop at the 50th & Center Hy-Vee. A couple of weeks ago I got some Prosciutto, a cheese the expert suggested (it was wonderful!) and of course, the olives. So good.
