Crock Pot Buffalo Chicken Lettuce Wraps

One morning I was trying to come up with something to put in the crock pot.
It was going to be a really busy day and I wasn’t going to be home long enough to get anything on the table.
 
I love to throw chicken breasts in the crock pot, and then cook them low and slow and shred them up.
 
It’s just a surprise what I throw in with them!!
Rotel… BBQ … ginger soy….
 
This time… it was Frank’s Hot Wing Sauce.

I have to say I don’t really have a “recipe” it really depends on how many chicken breasts you are preparing. But I will share with you the basics!

Crock Pot Buffalo Chicken Lettuce Wraps

This light summertime or anytime meal is easy, and cooks up in your crock pot or on your stove top in no time. Buffalo chicken lettuce wraps are perfect for the whole family!

Prep Time 5 minutes
Cook Time 8 hours
Additional Time 5 minutes
Total Time 8 hours 10 minutes

Ingredients

  • 4 - 6 chicken breasts
  • 1 bottle Frank's hot wing sauce (or your favorite brand) to taste
  • chicken stock
  • For serving: broccoli slaw, sunflower seeds and bib lettuce

Instructions

Spray your crock pot with non-stick cooking spray.

Place chicken breasts in the bottom. Pour about 1/2 cup of chicken stock over the top.

Pour hot wing sauce over the top, I used about half the bottle for 6 chicken breasts, and reserved the rest for topping if you wanted to later. Don't use quite as much if you don't like a lot of spice, you can always add more later.

Cook on low all day. Shred.

Tear large pieces of iceberg lettuce or leaf lettuce, top with chicken, broccoli slaw and sunflower seeds. Wrap and enjoy!

  1. Crock pot recipes are the best. This sounds delicious with the wing sauce then wrapped in crisp lettuce with slaw.
