How I dreamt up this Banana Split Jelly Roll

I was trying to come up with something new to serve when my Mom’s side of the family was here last weekend.  I thought this up one morning lying in bed, procrastinating the start of my day.

Which is way better than when I dream something up when I am drifting off to sleep – because 9 times out of ten, I forget what it was! I lose lots of good ideas that way!

I love my Banana Cream Pie Jelly Roll recipe, so I thought, let’s switch it up! This cake was scrumptious!

 

 

What’s in a Banana Split Jelly Roll?

The recipe starts with a from-scratch strawberry cake.  It’s baked in a jelly roll pan, then topped with prepared instant banana pudding and rolled up. 

Once it sets, it’s topped with a thick fluffy layer of Dream Whip and then sprinkled with chocolate curls. The presentation is beautiful from the outside, but once you slice it, the WOW factor happens!

All of the flavors of a banana split wrapped up in a pretty little slice of cake!

 

 

Step by Step Guide to the Perfect Banana Split Jelly Roll Cake

I was always very nervous about making a jelly roll.  Once you make one, and you see that if you follow the instructions, it’s easier than it looks, you will want to make them all of the time!

 

  1. Line a jelly roll pan with parchment paper, greased with Crisco.
  2. In a mixer bowl, beat eggs for about 5 minutes or until very thick and lemon-colored.
  3. Gradually beat sugar into eggs, followed by the strawberry extract.
  4. Slowly add flour, baking powder and salt and beat until batter is smooth.
  5. Add red (or pink) food coloring a little at a time until you achieve the desired color of pink.
  6. Pour into pan and spread into the corners. Bake for approximately 20 minutes or until a toothpick inserted in center comes out clean. Do not over bake.
  7. Loosen cake from the edges of the pan. While hot invert cake onto a large tea towel (four sack towel), and roll from the narrow side, jellyroll style. Cool completely on a wire rack.
  8. Prepare pudding and Dream Whip as directed on the packages. Place in the refrigerator until ready to use.
  9. Carefully unroll cooled cake. Remove towel and spread pudding evenly over cake.
  10. Roll back up and place seam side down on a plate.
  11. “Frost” with Dream Whip and top with shaved chocolate.
  12. Store in the refrigerator. Slice to serve.

Ingredients

Instructions

  • Preheat oven to 350 degrees.
  • Line a jelly roll pan with parchment paper, greased with Crisco.
