apple pork tenderloinTuesday I wanted to come up with something that could cook itself.  I had a long overdue lunch planned with an old friend, and didn’t want to have to worry about dinner when I got home that afternoon.  I had a pork tenderloin, and saw my bowlful of apples on the counter, and the idea became reality!  Apple Pork Tenderloin.

My house smelled amazing when I entered later with the kiddos after school.  I love when their first question when they come in is “MMMmmmmmm. That smells good! What’s for dinner?”

Fall is all about apples.  We have our favorites and wait for them to come back in season.  Do you have a favorite apple?  We LOVE Jazz Apples.  They aren’t here quite yet, so I used Braeburn apples for this recipe.  We always have apples on the counter, so easy to just grab and go, and they really do satisfy the tummy growl!

I used a little honey mustard and cinnamon with this mixture, too.  It all came together nicely.  The flavor was a little bit sweet, the meat was tender, and we enjoyed it with some Garlic & Rosemary Heirloom Potatoes and sweet corn.

Apple Pork Tenderloin {in the crock pot}

Tender Pork Tenderloin in slow cooked all day in the crock pot with the flavors of apples and fall.

Ingredients

  • 3-4 pound Pork Tenderloin
  • 1/2 of a sweet onion sliced
  • 2 apples cored and sliced
  • 1/2 cup apple juice
  • 1/4 cup honey
  • 2 Tablespoons honey mustard
  • 1 teaspoon cinnamon

Instructions

  • Score the top of the tenderloin with a knife before placing in your crock pot. I scored mine diagonally both ways. This will let the flavors get in there!
  • Add the onions and apples to the crock pot.
  • Mix the remaining ingredients in a small bowl with a whisk.
  • Pour over the top.
  • Cook 6-8 hours on low.

  1. Your pork recipes sound wonderful. I’ve always had a tough time cooking pork of any shape. Either not cooked enough or overdone. But I keep trying, cause I come from a pork loving family. Most of the stores I go to only have tenderloins that are smaller, so will have to talk to the butchers in charge. Thanks for all your great recipes.

    1. Thank you, Carol! I know what you mean about those little pork tenderloins. I have luck at my Kroger store getting the large ones. But yes, ask your butcher! I am always here if you need help cooking it! 🙂
