Refreshing Cherry-Mango Mojitos will be the hit of your next “party on the patio!”
Iced down and filled with a mint simple syrup, mango rum, mashed bing cherries, mint leaves and a twist of lime…. it’s like vacation in a glass really.
Raise your hand of you need a vacation.
All in favor say “aye!”
And the ayes, have it… even if you can’t take a vacation, you can mix up one of these, sip away and pretend.
I know I will be having another this weekend, when I enjoy my “stay-cation” in my back yard!

Cherry-Mango Mojito
Ingredients
- 1/4 cup Bing Cherries pitted and halved
- 1/4 cup mint leaves
- 1/2 small lime cut in half
- 1 1/2 shots Mango Rum
- 1 - 1 1/2 shots mint simple syrup**
- Club Soda
Instructions
- **Mint Simple Syrup: In a small saucepan bring 1 cup water and one cup sugar to a boil until sugar is dissolved. Remove from heat and toss in a handful of mint leaves. Let them steep for an hour or so, longer for a more intense mint flavor. Remove mint leaves and store syrup in a jar in the fridge.
- Put the mint leaves and the cherries in the bottom of a glass. (I used a stemless wine glass) Muddle cherries and mint together with the back of a spoon. Squeeze in 1/2 of the lime, add to glass.
- Fill glass with crushed ice.
- Add in rum and simple syrup, top off with club soda. Stir.
- Garnish with lime and mint leaves, and a cherry if desired.
