Cherry-Mango Mojito

Ingredients

  • 1/4 cup Bing Cherries pitted and halved
  • 1/4 cup mint leaves
  • 1/2 small lime cut in half
  • 1 1/2 shots Mango Rum
  • 1 - 1 1/2 shots mint simple syrup**
  • Club Soda

Instructions

  • **Mint Simple Syrup: In a small saucepan bring 1 cup water and one cup sugar to a boil until sugar is dissolved. Remove from heat and toss in a handful of mint leaves. Let them steep for an hour or so, longer for a more intense mint flavor. Remove mint leaves and store syrup in a jar in the fridge.
  • Put the mint leaves and the cherries in the bottom of a glass. (I used a stemless wine glass) Muddle cherries and mint together with the back of a spoon. Squeeze in 1/2 of the lime, add to glass.
  • Fill glass with crushed ice.
  • Add in rum and simple syrup, top off with club soda. Stir.
  • Garnish with lime and mint leaves, and a cherry if desired.
