It’s that time of year! Time for parties, and celebrating and FOOD!  Who couldn’t use a quick and super tasty new appetizer recipe?


I have, once again, partnered with my friends from Paisley Farms, and created a delicious recipe using one of their many organic products, their Marinated Mushrooms!  Button mushrooms marinated with red pepper flakes, oregano and garlic.

Four ingredients, and these skewers will be on a platter and ready for your guests.  Paisley Farms Organic Marinated Mushrooms, cherry tomatoes, fresh mozzarella cheese and chicken, skewered and plated and ready in no time.  Give a light sprinkle of basil before serving if desired.

  • 1 large chicken breast (about 1/2 pound) grilled and cut into chunks
  • 20 Paisley Farms Marinated Mushrooms, drained (about 1/3 of a jar)
  • 20 Grape or Cherry Tomatoes
  • 16 ounce package Fresh Mozzarella cheese, sliced and cut into bite sized chunks
  • chopped basil for sprinkling, optional


  • Skewer 2 tomatoes, 2 chunks of chicken, 2 marinated mushrooms and two chunks of mozzarella cheese, plate and sprinkle with basil.
