I don’t know about you .. but guacamole just may be one of my favorite things to eat. When done right, who needs a whole meal? Just belly up to a bowl of guac and have at it! Thinking ahead to the big game, I wanted to think of a way to make that favorite of mine a little more “hands-on” if you will . When you’re cheering on your team, keep that guacamole contained … inside an egg roll!

Of course, cooking with avocado starts with one thing. Choosing the right avocado!
How many times do you think you did it right, only to come home and find it wasn’t quite ripe enough? Choosing the right avocado is actually quite simple, if you remember three things; Color, Texture and Firmness. Is the avocado green? Bright green or Dark green, almost black? A ripe avocado will have a dark green, almost black skin. How about the texture? The skin should have a slightly bumpy texture. Now, check for firmness. A ripe avocado with yield to gentle pressure applied to it, without indenting in and feeling mushy. Keep in mind, if you are purchasing avocados at the grocery store to use throughout the week, you will want to get some that are not nearly as ripe. You can always ripen an avocado by placing it in a paper bag with a banana. Sound crazy? It really works!! Ripe bananas contain a natural plant hormone called ethylene, that will trigger ripening. The bag traps the ethylene, and the avocado will ripen quicker, sometimes even overnight! Place an egg roll wrapper corner facing down. Place two tablespoons of the guacamole mixture, and fold up the bottom corner. Next fold in the two side corners, you have made a little “envelope” for the deliciousness. Brush the top corner with egg wash. Roll from the bottom up.
Egg rolls are ready to fry! Place some vegetable oil in a cast iron skillet, when it’s hot, place egg rolls in the oil and fry until all sides are golden brown. Remove from oil and place on a plate covered with a paper towel to remove any excess grease. Serve Hot.

Guacamole Egg Rolls with Spicy Cilantro Ranch Dipping Sauce
Ingredients
For the Egg Rolls:
- 3 ripe Avocados From Mexico
- 1/8 cup red onion minced
- 1 Roma tomato diced small, about 1/4 cup
- 1/2 jalapeño minced, about 1 Tablespoon
- Juice of 1 lime
- 1/2 teaspoon salt
- 1 Tablespoon chopped cilantro
- 1-2 teaspoons TABASCO® Sauce
- 12 egg roll wrappers
- 1 egg white whisked into 1/4 cup water
- vegetable oil for frying
For the Sauce:
- 1/4 cup milk + 1 teaspoon lemon juice
- 1/2 cup plain Greek yogurt
- 1 teaspoon TABASCO® Sauce
- 1 Tablespoon Ranch Seasoning mix
- pinch of salt
- 1 Tablespoon chopped fresh cilantro
Instructions
- To Prepare Dipping Sauce: Mix milk and lemon juice together, let stand for 10 minutes. (you have just made buttermilk) Add to remaining ingredients, and refrigerate until ready to use.
- To prepare Egg Rolls: Combine avocados, onion, tomato, jalapeño, cilantro, salt, lime and TABASCO® Sauce in a medium sized bowl. Roll 2 Tablespoons guacamole mixture up into each egg roll wrapper (see instructions for rolling in post above) Seal with egg wash. Coat the bottom of a cast iron skillet with vegetable oil. Heat until hot. Place egg rolls in oil and cook until golden brown on all sides. Remove and place on a plate covered in a paper towel to remove excess grease. Serve hot with dipping sauce.
