A couple of weekends ago, the clouds parted and the sun came out.  For a few days, it felt gloriously like spring should feel.  It was Sunday, which made it even better, because that’s the day we always have our big family dinner.  It made it possible to not only use our Traeger grill, but to be able to sit outside while it worked its magic.

Every Sunday all of the kids are here for dinner.  My mother-in-law almost always joins us, too.  This particular Sunday, I set out to try a recipe for Dorothy Lynch Dressing & Condiment that I had been dreaming up in my head.

I don’t know about you, but I love pork chops on the grill.  They are always packed with flavor, and are also super economical.  How do you make a pork chop on the Traeger even better?  Slather it with homemade barbecue sauce.  But not just any homemade BBQ sauce.  Make it with Dorothy Lynch!

Are you asking, “why would I turn a condiment into another condiment?”  I want to use that ‘mom come-back’ and say “Because I said so.” But I won’t.  So, I will say this.  Because it just works.  This Dorothy Lynch Dressing & Condiment is the perfect place to start when making homemade barbecue. 

What does Dorothy Lynch Taste like?

We can best describe the flavor of Dorothy Lynch as sweet and spicy with a thick and creamy texture.  Many assume it tastes like French dressing based on its color.  It tastes nothing like it.  Where French dressing is oil based, Dorothy Lynch is tomato based.  In a word, it tastes like homemade.   The perfect place to start an amazing homemade barbecue sauce, am I right?

To make the BBQ sauce, you heat together Dorothy Lynch, honey, brown sugar, soy sauce, sriracha, apple cider vinegar, Worcestershire sauce and garlic in a sauce pan.  If you feel it needs to be a little thicker, you can thicken with a little cornstarch dissolved in water.

You will use this to barbecue your pork chops, and I sat a little extra on the table to add some while we were eating.  Any leftovers need to be stored in your refrigerator.

We used our Traeger smoker grill to prepare these pork chops.  Salt and pepper each pork chop on both sides. Prepare smoker with mesquite pellets. Bring temperature to 375 degrees. Leave at 375 degrees for 10 minutes. Place pork chops on the smoker for 15 minutes.

Flip and smoke for another 15 minutes.

Brush on BBQ sauce. Close lid for 3 minutes. Flip over and repeat sauce on the other side. Close lid for 3 minutes. 

We had ours with corn on the cob and a big salad (with Dorothy Lynch, of course!)  Everyone RAVED about these pork chops and the amazing flavor the homemade barbecue sauce had.

Of course, these pork chops can be prepared on a regular grill, too.  Follow the instructions and check to make sure the internal temperature of your pork is between 145 and 160 degrees before you serve it.

Dorothy's BBQ Pork Chops

Ingredients

  • 4 - 1 " thick boneless pork loin chops
  • Salt and Pepper
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1 cup Dorothy Lynch Dressing & Condiment
  • 1 Tablespoon soy sauce
  • 1/2 teaspoon Sriracha
  • 1/2 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Apple Cider Vinegar
  • 2 cloves garlic minced

Instructions

  • Prepare the BBQ Sauce: To a small saucepan add brown sugar, honey, Dorothy Lynch Dressing & Condiment, soy sauce, Sriracha, Worcestershire sauce, apple cider vinegar and minced garlic. Stir until combined. Simmer over medium-low heat, stirring occasionally for about 15 minutes. If you want to thicken it up a little bit, stir together 1 Tablespoon of cornstarch dissolved in 1 Tablespoon water, and whisk into the BBQ sauce for about 5 minutes more. Transfer to a jar. Refrigerate any that isn't used.
  • Preparing the Pork Chops on a smoker: Salt and pepper each pork chop on both sides. Prepare smoker with mesquite pellets. Bring temperature to 375 degrees. Leave at 375 degrees for 10 minutes. Place pork chops on the smoker for 15 minutes. Flip and smoke for another 15 minutes. Brush on BBQ sauce. Close lid for 3 minutes. Flip over and repeat sauce on the other side. Close lid for 3 minutes. Remove from grill. Serve with extra sauce.

Notes

Of course these pork chops can be made on a regular grill. Monitor the internal temperature and serve when pork chops reach 145-160 degrees F.
