Moist, cakey Pumpkin Spice Bars made with Bisquick baking mix and topped with a creamy pumpkin-spiced cream cheese frosting. This easy fall dessert makes a big pan, perfect for sharing!
1Tablespoonpumpkin spice liquid coffee creamer or milk
1teaspoonvanilla extract
1/2teaspoonpumpkin pie spice
3cupspowdered sugar
Instructions
Preheat oven to 350°F. Grease a 15 1/2 x 10 1/2 x 1-inch jelly roll pan and set aside.
In a large mixing bowl, beat together the sugar, pumpkin puree, vegetable oil, and beaten eggs for 1 minute.
Fold in the Bisquick baking mix, pumpkin pie spice, and optional raisins until combined.
Spread the batter evenly into the prepared pan.
Bake for approximately 30 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bars to cool completely before frosting.
Prepare the frosting: In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy. Mix in the pumpkin spice coffee creamer (or milk), vanilla extract, and pumpkin pie spice.
Gradually add the powdered sugar, mixing until smooth and the desired frosting consistency is reached.
Spread the frosting evenly over the cooled pumpkin bars. Refrigerate until chilled, then slice and serve.
Notes
This recipe could easily be cut into 24 bars for smaller, less generous-sized portions.
Coffee Creamer: Pumpkin spice liquid coffee creamer adds another layer of fall flavor to the frosting. Regular milk works just as well if you don't have coffee creamer on hand.
Homemade Bisquick: You can use homemade Bisquick baking mix in place of store-bought.
Raisins: These are optional. Leave them out if you prefer your pumpkin bars without them.
Storage: Store frosted pumpkin bars in an airtight container in the refrigerator.
