Ingredients
Salad:
2cupscauliflower pearlscauliflower rice
5mini cucumberssliced (2 cups)
20grape tomatoesquartered
1cuporange and yellow sweet peppers
2Tablespoonsfresh parsleychopped
1/4cupred onionsliced
1cupPaisley Farm Dilled Sproutshalved
Dressing:
1/3cupfresh squeezed lemon juice
1/4cupolive oil
1/2Tablespoonfresh oregano and fresh thymechopped
1/2teaspoonfresh dill
1teaspoongarlicminced
Salt & Pepperto taste
Top with crumbled feta cheese when serving if desired
Instructions
Combine all of the veggies in a big bowl.
Mix together the dressing ingredients.
Pour over salad.
Chill until ready to eat. Top with Feta cheese if desired.
