1 cup red onion diced 1 large red bell pepper diced (about a cup) 4 Tablespoons bacon grease or sub olive oil 4 cloves garlic minced 2 15 ounce cans black beans drained and rinsed 1 32 ounce beef stock (can sub vegetable or chicken) 1 teaspoon cumin 1 teaspoon chili powder 2 teaspoons salt 1/2 teaspoon black pepper Optional Toppings: tortilla strips, cilantro, shredded cheese, diced tomato, sour cream, lime
In a dutch oven over medium heat, add bacon grease, onion and pepper. Saute until softened, about 10 minutes.
Add in garlic and spices. Cook a couple of minutes more.
Add in beans and beef stock. Bring to a boil, then lower to a simmer. Simmer for 20 minutes.
Remove from heat. Using your hand blender, carefully blend the soup until smooth.
Return to stove, simmer for another 15 minutes. Soup will thicken.
Serve hot, topped with desired toppings.
Crockpot Option
Sauté the onion, bell pepper, and garlic in a skillet before adding them to the crockpot.
Add all remaining ingredients to the slow cooker.
Cook on low for 6–8 hours or high for 3–4 hours .
Use an immersion blender to puree until smooth, then serve with your favorite toppings.
How to Store Leftovers
This soup stores beautifully, making it great for meal prep.
Refrigerate: Store cooled soup in an airtight container for up to 4 days .
Freeze: Place in freezer-safe containers for up to 3 months . Thaw in the fridge overnight before reheating.
Reheat: Warm on the stovetop over medium heat or microwave in short intervals, stirring in between.
