Country Club Chicken and Pasta

Ingredients

  • 4 chicken breasts
  • salt and pepper to taste
  • 6 slices of bacon
  • 1 medium sized onion minced
  • 1 small apple chopped
  • 1 8 ounce container sliced fresh white mushrooms
  • 1 10.75 ounce can Cream of Mushroom Soup
  • 1/4 cup dry white wine
  • 2/3 cup extra sharp white cheddar cheese
  • 1 pound spaghetti cooked al dente

Instructions

  • Preheat oven to 350 degrees F. Spray a 9x13 baking dish or similar casserole dish with non-stick cooking spray and set aside.
  • In a large frying pan, cook bacon. When the bacon is done cooking, place it on a paper towel, and set aside. Dint drain the bacon grease.
  • Salt and pepper your chicken breasts. Place them in the hot skillet in the bacon grease, sear on both sides to a golden brown.
  • Place the chicken into the prepared baking dish.
  • Drain the bacon grease but don’t wash your pan. In this pan, sauté your onion for a few minutes, until they become translucent. Add the minced apple, and saute for a couple of minutes more. Add mushrooms, and cook until they are heated through. 
  • Add the wine and cook for a couple of minutes before adding in the cream of mushroom soup, grated cheese and crumbled bacon.
  • Pour this sauce over the top of the chicken.
  • Cover and bake for 30-35 minutes.
  • Serve over cooked pasta.
