Easy Ground Beef Enchiladas Recipe

Hearty beef and zesty enchilada sauce rolled up in flour tortillas, topped with more sauce and cheese make these Easy Ground Beef Enchiladas an easy casserole the entire family will love. Ideal for those busy weeknights when you’re craving Mexican food.

Ingredients

  • 2 pounds ground beef
  • 1 small onion chopped
  • 8 flour tortillas burrito size
  • 19 ounce can Enchilada Sauce
  • 2 1/2 cups shredded Cheddar Cheese

Instructions

  • Brown ground beef with onion until done. Season with Salt and Pepper, drain off excess fat.
  • Spread 2 Tablespoons of enchilada sauce down the center of a tortilla, spoon beef over the sauce. (evenly divide meat between 8 tortillas)
  • Sprinkle with a good heavy pinch of cheddar cheese.
  •  Roll, Repeat, lining them seam side down in a 9×13 prepared pan. 
  • Top with remaining sauce and cheese. 
  • Bake at 350 degrees covered for 30 minutes
  • Uncover and bake an additional 10 minutes or until cheese is bubbly.
