Greek Cauliflower Rice Salad with Brussels Sprouts

Salad made with fresh veggies and cauliflower rice, combined with dilled Brussels sprouts and topped with a simple dressing made with fresh lemon, oil and Greek herbs.

Ingredients

  • Salad:
  • 2 cups cauliflower pearls cauliflower rice
  • 5 mini cucumbers sliced (2 cups)
  • 20 grape tomatoes quartered
  • 1 cup orange and yellow sweet peppers
  • 2 Tablespoons fresh parsley chopped
  • 1/4 cup red onion sliced
  • 1 cup Paisley Farm Dilled Sprouts halved
  • Dressing:
  • 1/3 cup fresh squeezed lemon juice
  • 1/4 cup olive oil
  • 1/2 Tablespoon fresh oregano and fresh thyme chopped
  • 1/2 teaspoon fresh dill
  • 1 teaspoon garlic minced
  • Salt & Pepper to taste
  • Top with crumbled feta cheese when serving if desired

Instructions

  • Combine all of the veggies in a big bowl.
  • Mix together the dressing ingredients.
  • Pour over salad.
  • Chill until ready to eat. Top with Feta cheese if desired.

Notes

Also very good with Kalamata olives!
