Ingredients

  • 2 large cucumbers chopped, skins on (about 4 cups)
  • 1 tomato chopped
  • 1/2 red onion chopped
  • 1 jalapeno chopped
  • 1/2 cup cilantro more or less to taste
  • 1 can Rotel undrained
  • 1 Ranch dressing packet
  • 1/4 cup white wine vinegar
  • Salt & Pepper

Instructions

  • Mix everything together and chill overnight for the best flavor!
