Ingredients
4ripe avocadosCut into chunks
1small red onionthinly sliced
1/3cupcilantro leaveschopped (I used a little more)
2cupsheirloom tomatoessliced in half (can sub cherry or grape tomatoes)
For the dressing:
juice of one large lime
1-2teaspoonshot sauce
1teaspoonapple cider vinegar
3Tablespoonsextra virgin olive oil
Sea salt and Freshly cracked black pepper
Instructions
Prepare dressing, set aside.
Prepare veggies, adding tomatoes, onion and cilantro to a medium sized bowl. Toss veggies.
Drizzle dressing over tomatoes. Fold in avocado chunks.
