Southwestern Sausage Brunch Roll-Ups

Pastry dough rolled around breakfast sausage links, scrambled eggs, green chilies and Monterrey Jack cheese. Baked up til golden brown and flaky.

Ingredients

  • 1 8 ounce package Monterrey Jack Cheese, shredded
  • 6 eggs one reserved
  • 4 Tablespoons diced green chilies
  • 1 package Johnsonville Original Breakfast Sausage Links
  • 1 box of Puff Pastry sheets 2 sheets

Instructions

  • Preheat oven to 400 degrees and line a cookie sheet with parchment paper.
  • Scramble together 5 eggs and green chilies. Prepare in a skillet, set aside.
  • Whisk one egg in a small bowl, set aside.
  • Cook Johnsonville Breakfast links according to package.
  • Cut each pastry sheet into 9 squares. (you will have a couple of extra squares, because you have 14 sausages)
  • Place one sausage near the edge of one square place a spoonful of scrambled eggs and a sprinkling of cheese over the eggs. Gently stretch the pastry over the sausage and roll up. Place seam side down on prepared cookie sheet.
  • Brush tops with egg.
  • Bake for 12 minutes. Serve hot.

Notes

Prepare these ahead of time, and bake them up when you're ready!
